One of my easiest and most popular recipes in my arthritis cookbook is Salsa Chicken. This is a quick Mexican chicken dish with salsa and only four ingredients. Serve it over rice to take advantage of the tasty southwestern sauce. Sometimes, when suffering from arthritis, it is difficult to use utensils. The Philly Cheese Steaks allow you to enjoy eating by using your hands and avoid the pain that sometimes comes with gripping a fork or knife. One of my favorite bar cookies combines spice cake, yams, and chocolate chips together to make Yam Chocolate Spice Bars All of these recipes are from my book trim&TERRIFIC Eating Well to Fight Arthritis. This cookbook is designed to focus on foods to minimize the effects of arthritis with easy-to-follow, mainstream, time-friendly and super-satisfying recipes.
