Easy White Chocolate Bundt-Need Quick Easy Cake?

This has been one of my most popular recipes.  Every time I make it, I get asked for the recipe.  So, I am delighted to share it with you using Great Value products from Walmart–with a few minor changes, it is also called the Yummy Yogurt Cake.  When you are asked to bring a cake to your next party, don’t stress and make this simple White Chocolate Bundt Cake.  Another one of those recipes, my daughter, Haley, makes in literally minutes.  I keep these pantry-friendly ingredients on hand to whip up this unbelievable cake in a pinch. And, during the holiday time, have fun with the variety of different shaped Bundt pans—where you truly can turn a cake into a centerpiece or show-stopper treat.  Bundt cakes are one-stop cooking-dump and stir and bake!  Beginning with a cake mix, white chocolate, and almond extract, this cake becomes an extraordinary dessert.  I promise once you make this cake, you will turn to this recipe over and over again, as you won’t have a choice as White Chocolate Bundt cake is my most requested and will quickly be yours.
Makes 16 servings

1 (18.25-ounce) box yellow cake mix

1 (4-serving) box instant white chocolate pudding and pie filling

1 cup fat-free sour cream

1/4 cup canola oil

2/3 cup fat-free milk

1 egg

3 egg whites

1/2 cup white chocolate chips

1/2 cup chopped pecans

1 1/2 cups confectioners’ sugar

1/4 cup skim milk

1 tablespoon almond extract

1. Preheat oven 350° F. Coat 10-inch nonstick Bundt pan with nonstick cooking spray.

2. In mixing bowl, combine cake mix, pudding, sour cream, oil, milk, egg, egg whites, mixing until well mixed. Stir in white chocolate chips and pecans.

3. Pour in Bundt pan and bake 40-50 minutes or until toothpick inserted comes out clean.

4. In small bowl, mix confectioners’ sugar, milk almond extract; set aside.

5. Cool cake on rack 10 minutes before inverting on serving plate. Drizzle glaze over warm cake.

To Prepare and Eat Now: Slice and serve.

To Freeze: Cool to room temperature, wrap, label and freeze. Recommended freezing time: up to 4-6 months.

To Serve: Defrost, slice and serve.

Note: Different shaped Bundt pans allow for fun types of cakes.

Mini Pizzas-Quick Summer Snack

Looking for a quick snack with simple ingredients that can be prepared in a snap!  This was a recipe I created for Walmart, Mini Cheese Pizzas-a fun recipe that the kids can help, be creative and will love to eat!

Mini Cheese Pizzas

Prep Time: 5 minutes
Cook Time: 10 minutes
Meal Occasion: Lunch/Snack/Dinner
Makes 10 pizzas
Serving size one biscuit
Cost Per Serving: less than $1

Ingredients
•1 (10-biscuit) can Great Value jumbo flaky refrigerated biscuits
•1/3 cup Great Value Pizza Sauce
•1/2 cup Great Value shredded mozzarella cheese

Instructions:
1.Preheat oven 450ºF. Pat each biscuit into 4-inch circle on baking sheet coated with nonstick cooking spray.
2.Spoon pizza sauce on each biscuit round. Sprinkle cheese over pizza sauce, bake 8-10 minutes, or until cheese is melted. Serve immediately.

Tips:
1.Use veggies to make funny faces, green pepper slice for mouth, black olives for eyes, and mushroom for nose – kids will love this!
2.Spice your pizza up, try different marinara sauces.

Salsa Chicken-4 Ingredients

Salsa Chicken

Salsa is a pantry staple and combine it with three other ingredients and you have dinner.  This is a fiesta on a plate and everyone will love the flavor.  Did you know that 1/2 cup salsa=1 serving vegetables?  Grab from the pantry to prepare this easy, affordable recipe.  I especially love the Great Value White Corn and Black Bean Salsa-everyone knows about that salsa from its reputation.  When Walmart asked for an easy affordable recipe, Salsa Chicken was an easy solution.  Don’t know what to prepare for dinner tonight-give this a try!

SalsaChicken

Prep Time: 5 minutes
Cook Time: 1 hour
Meal Occasion: Dinner
Makes 8 servings
Serving size 1 piece of chicken
Cost Per Serving: less than $2

Ingredients:
•2 pounds Great Value frozen skinless, boneless chicken breasts, thawed
•2 cups Great Value White Corn and Black bean salsa
•1 (15-ounce) can Great Value corn, drained
•1 1/2 cups Great Value shredded reduced-fat Fiesta cheese
•1/2 cup chopped green onions, optional

Instructions:
1.Preheat oven 350ºF.
2.Place chicken in 2-quart casserole coated with nonstick cooking spray. Cover with salsa and corn. Cover with foil and cook for 1 hour.
3.Uncover, sprinkle with cheese, continue cooking 5 minutes, or until done. Sprinkle with green onions, if desired.

Tips:
•Use different flavored salsas to change the flavor.
•Did you know 1/2 cup salsa is equal to one serving of vegetables?

Stuffed Veggie Potatoes-Easy Entree or Super Side (vegetarian)

I love stuffed potatoes so I thought what an easy way to make veggie stuffed potatoes-use frozen veggies as that is such a time saver-you instantly have an assortment of vegetables without any cutting or chopping.  Whenever I make stuffed potatoes, I always make extra to keep in my freezer.  I wrap them individually in  plastic wrap and store in freezeable plastic bags to pull out for that last minute meal, lunch or side.  Wow, do I look good for a last minute dinner!

Stuffed Veggie Potatoes

Prep Time: 10 minutes
Cook Time: 1 hour 15 minutes
Meal Occasion: Lunch/Snack/Dinner
Makes 8 servings
Serving size ½ potato
Cost Per Serving: less than $1

Ingredients:
4 medium baking potatoes
1 1/2 cups frozen Great Value mixed vegetables
2 tablespoons Great Value butter
1/2 cup Great Value fat free plain yogurt
Great Value salt and pepper to taste
1/4 cup chopped green onions
1 1/2 cups Great Value shredded reduced fat Cheddar cheese, divided
1 teaspoon Great Value dried basil leaves

Instructions:
1.Preheat oven 400° F.
2.Wash and scrub potatoes.  Bake 1 hour or until soft when squeezed.  Cut each baked potato in half lengthwise.  Scoop out inside, leaving thin shell.
3.Meanwhile, cook mixed vegetables according to package directions, drain, and set aside.
4.In large bowl, mash potatoes with butter and yogurt, mixing until creamy.  Season to taste.  Stir in green onions, 1 cup Cheddar cheese, mixed vegetables and basil.
5.Stuff potato shells with the mixture.  Sprinkle with remaining cheese.
6.Reduce oven to 350° F.  Place potatoes on baking sheet and bake 15 minutes or until well heated and cheese is melted.

Tips:
•Serve with meat, chicken, or fish for a more complete meal or makes great vegetarian entrée when using whole potato.

Tacos-Try my Taco Salad-My Family Favorite

Taco Rice Salad

When you say tacos, you have everyone’s attention, all ages!  Go with a taco salad as this is a one-dish meal, and this entree salad is light, yet, satisfying enough to feed the hearty eater.  What’s great about this recipe is you can also add your favorite veggies hanging around in the refrig-cooking is creative-so toss in beans, corn, avocados, adding more nutrtion and flavor.  Always, look for the leaner cuts of meat-those that end in a ’round or loin’ so you will have leaner protein!  And, wait until you taste the dressing-only two ingredients!  Use different flavored salsas to change the taste without effort.  This was one of my favorite Walmart videos I did as it is one of my favorite family recipes.

 Taco Rice Salad

Prep Time: 10 minutes
Cook Time: 15-20 Meal Occasion: Dinner   Lunch/Dinner
Makes 6 servings
Serving size 1 cup
Cost Per Serving: less than $2

Ingredients:
1 pound ground sirloin
1/2 cup  finely chopped onion
1/2 teaspoon Great Value minced garlic
1/2 teaspoon Great Value cumin
Great Value Salt & pepper to taste
3 cups cooked Great Value brown rice
1/2 head lettuce, shredded, or 4 cups mixed greens
2 tomatoes, chopped
1/2 cup Great Value shredded reduced-fat Cheddar cheese
1/2 cup chopped red onion
1/2 cup Great Value fat free plain yogurt
1/2 cup Great Value salsa or picante sauce
Great Value tortilla chips (optional)

Instructions:
1. In nonstick skillet, cook meat, onion, and garlic until done, 5-7 minutes. Drain excess fat.
2. Add cumin, salt, pepper, rice (follow directions on bag or box to cook rice). Remove from heat, cool.
3. In bowl, combine lettuce, tomatoes, cheese, red onion, and rice mixture.
4. In another bowl, mix yogurt and salsa.  Toss with lettuce-rice mixture. Serve immediately, with extra salsa and chips, if desired.

Tips:
• Toss in black beans and corn for additional flavor and nutrition.
• Brown rice is a whole grain and contains more fibers, vitamin and minerals than the white rice.

Pizza Rice-Who Turns Down Pizza?

Get creative with kids to entice them to the dinner table.  Yes, four ingredients create this easy flavor packed dish that can be used as a vegetarian entree or super side.  Pizza Rice is a great way to introduce your kids to brown rice, an easy way to boost your fiber.  With all the characteristics of a pizza, you will have kids running, but also, don’t count out the adults!  And, this fun and tasty recipe can be prepared in minutes, and also is budget friendly.

Pizza Rice

Prep Time: 5 minutes
Cook Time: 30 minutes

Makes 4-6 servings

1 (14 1/2-ounce) can Great Value Italian diced tomatoes, with juice
1 teaspoon dried Great Value oregano leaves
4 cups cooked Great Value brown rice
1 cup Great Value shredded mozzarella cheese

1.In large nonstick skillet, heat tomatoes with oregano over low heat.
2.Stir in cooked rice (follow recommended directions on bag or box), and cheese. Cook over low heat until well heated and cheese is melted, stirring, about 3- 5 minutes. Serve.

Tips:
Using Great Value brown rice makes this dish just a little healthier because it adds fiber.

Easy Everyday Chicken-Quick Dinner

Looking for a real family-kid pleaser recipe-this was my “go-to” recipe when I needed a quick nightly dinner or my kids volunteered me to cook for a prom, home-coming or a dinner at our house.  Simple, and unassuming, yet has a gourmet appeal enticing all ages.  I always make rice for the sauce and broccoli (what kid doesn’t like broccoli) so my plate has color.  When Walmart asked for an Easy Chicken recipe featuring their Great Value brand, I knew exactly what to make.  It is affordable, easy and healthy, and best of all quick to make!  Impress tonight with Easy Chicken!

Holly’s Easy Chicken
When I was testing recipes my family made me promise to repeat this dish often. The simplicity of the dish is very appealing.

Makes 8 servings

2 pounds boneless skinless chicken breasts
1/3 cup all-purpose flour
Salt and pepper to taste
2 tablespoons olive oil
1 cup canned fat-free chicken broth
1 tablespoon cornstarch
1 tablespoon lemon juice
2 tablespoons chopped parsley

1. Dust chicken breasts with flour, salt and pepper.
2. In large nonstick skillet, heat olive oil and cook chicken about 5-7 minutes or until golden brown and almost done.
3.  Mix together chicken broth and cornstarch; add to skillet. Reduce heat, cover, and continue cooking, about 20 minutes, stirring occasionally or until chicken is done.  Add lemon juice. Sprinkle with parsley before serving.

Louisiana Dirty Rice with Holly on Walmart

When it comes to some of our favorite classic Louisiana dishes, Dirty Rice is high on the list.  This dish is a Louisiana tradition with a mixture of ground beef, seasonings and brown rice served as side or entrée. You can adjust the seasonings to your family’s palate.  I had fun creating this budget friendly recipe using the Great Value brand for Walmart.  Look for leaner cuts of meat ending in loin or round-ground sirloin!

Louisiana Dirty Rice

Prep Time: 10 minutes
Cook Time: 30 minutes (brown rice takes about an hour to cook)

Makes 4-6 servings

Serving size 1 cup
Cost Per Serving: less than $2

1 pound ground sirloin
2 stalks celery, chopped
1 onion, chopped
1 green bell pepper, seeded and chopped
1 teaspoon of Great Value minced garlic
1 tablespoon Great Value Worcestershire sauce
1/4 teaspoon Great Value pepper
1 cup uncooked Great Value brown rice
1 3/4 cups Great Value beef broth

In large nonstick skillet, cook beef, garlic, celery, onion, and green pepper over medium heat until meat is done and vegetables are tender.
Add Worcestershire sauce and pepper, stirring well. Add broth and rice, mixing well. Bring to boil; reduce heat, cover, and cook about an hour or until rice is done.

Ingredients:

  • 1 onion, chopped
  • 1 teaspoon Great Value minced garlic
  • 1 (15-ounce) can Great Value tomato sauce
  • 1 (14 1/2-ounce) can Great Value diced tomatoes
  • 4 cups Great Value chicken broth
  • Great Value salt and pepper to taste
  • 1 tablespoon Great Value Worcestershire sauce
  • 1 bay leaf
  • 1 (16-ounce) package Great Value mixed frozen vegetables   (I used mixed vegetables, not stir-fry)
  • 1/3 cup Great Value long grain rice, uncooked

Instructions:

  1. In large pot coated with Great Value nonstick cooking spray, cook onion, and garlic, 5–7 minutes.
  2. Add tomato sauce, tomatoes, broth, salt, pepper, Worcestershire sauce, bay leaf, and vegetables. Bring to boil.  Add rice and reduce heat.
  3. Continue cooking over medium heat until rice is done, about 15-20 minutes. Add more water if too thick.

Tips:

  • Frozen vegetables give you vegetable variety without chopping.
  • For a heartier version, add lean ground beef and call Burger Soup-kid’s love it.
