Crazy For Crawfish

It is crawfish season here and every time we go out to dinner, my husband wants boiled crawfish!  My daughter came in town for a wedding this weekend, and I think she ate boiled crawfish three times in just a weekend.  If you live in Louisiana, you live for crawfish season-boiled crawfish with corn and potatoes-it is truly unique to our area.  For those of you that don’t live here, you can still enjoy crawfish as crawfish tails are available everywhere, you just want to make sure they are Louisiana crawfish!  I truly am more interested in cooking with crawfish tails-and my favorite part of a crawfish boil is when someone is nice enough to peel the extra crawfish and give me the seasoned tails…now talk about making a recipe good!  My Gulf Coast cookbook focuses on our wonderful Louisiana food so includes tons of crawfish recipes…here’s one of my favorites-move over crabcakes as Crawfish Cakes are the best!  And, another favorite easy recipe with crawfish also, from Gulf Coast Favorites Crawfish Dip.

Crawfish Cakes with Horseradish Sauce from Gulf Coast Favorites Cookbook
Move over crab cakes—crawfish adds a new slant to an old classic. Outrageously delicious!

Makes 8 crawfish cakes

1 cup saltine cracker crumbs
1 tablespoon Dijon mustard
2 tablespoons light mayonnaise
1 teaspoon hot sauce
1 bunch green onions, chopped
1/3 cup chopped fresh parsley
1/3 cup shredded, reduced-fat sharp Cheddar cheese
1 pound crawfish tails, rinsed and drained
Salt and pepper to taste
1 tablespoon olive oil
Flour
Horseradish Sauce (recipe follows)

1. In a medium bowl, carefully combine all ingredients except oil and flour.
2. Cover and chill for 30 minutes, if time permits. Shape into 8 patties.
 3. In a large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned.
4. Serve with Horseradish Sauce.

Horseradish Sauce
Quick and easy, this sauce has bite.

1/4 cup nonfat sour cream
2 tablespoons light mayonnaise
1 tablespoon lemon juice
2 tablespoons prepared horseradish
Pinch sugar

1. In a bowl, combine all ingredients. Mix well.
