What are some easy anti-inflammatory diet recipes ? Can you prepare arthritis diet recipes? With millions of Americans faced with daily pain from swollen joints and inflammation associated with arthritis, I decided to write an arthritis cookbook. I had so much fun cooking up simple, delicious anti-inflammatory diet recipes at WWL-TV in New Orleans.  I knew immediately which recipe to prepare on TV.  One of my easiest and most popular recipes in my arthritis cookbook is Salsa Chicken. This quick Mexican chicken dish includes salsa and only four ingredients. Serve over rice to take advantage of the tasty southwestern sauce.

Guacamame Makes Easy Quick Dip

This wonderful delicious and nutritious dipcombines avocado and edamame.  I like to serve with chips or veggies. Guacamame includes fantastic flavors and everyone loves this popular edamame recipe.  It is from my arthritis cookbook.  This practical cookbook includes a varitety of arthritis diet recipes.

Makes 10 (1/4-cup) servingsarthritis diet recipes with anti inflammatory recipe for arthritis cookbook

1 large avocado, (about 2/3 cup mashed)
1 1/2 cups shelled edamame, thawed
2 tablespoons lime juice
1/2 teaspoon minced garlic
1/2 cup salsa
3 tablespoons nonfat plain Greek yogurt
Salt and pepper to taste

1. In food processor, combine all ingredients and blend until smooth.

Terrific Tip: Stuff vegetables with mixture or use as a sandwich spread.

Nutrition Nugget: Soybeans are high in omega 3 fatty acids.  Omega 3’s are necessary to ingest through food for their anti-inflammatory benefits.
