Guacamame Makes Easy Quick Dip
This wonderful delicious and nutritious dipcombines avocado and edamame. I like to serve with chips or veggies. Guacamame includes fantastic flavors and everyone loves this popular edamame recipe. It is from my arthritis cookbook. This practical cookbook includes a varitety of arthritis diet recipes.
1 large avocado, (about 2/3 cup mashed)
1 1/2 cups shelled edamame, thawed
2 tablespoons lime juice
1/2 teaspoon minced garlic
1/2 cup salsa
3 tablespoons nonfat plain Greek yogurt
Salt and pepper to taste
1. In food processor, combine all ingredients and blend until smooth.
Terrific Tip: Stuff vegetables with mixture or use as a sandwich spread.
Nutrition Nugget: Soybeans are high in omega 3 fatty acids. Omega 3’s are necessary to ingest through food for their anti-inflammatory benefits.
