Crawfish Remoulade from Gulf Coast Favorites cookbook

A simple classic recipe with Louisiana crawfish mixed with spicy horseradish dressing.  This healthy remoulade sauce recipe is so versatile. Serve on a bed of lettuce for a first course. This remoulade recipes also makes a light lunch or wonderful dip. Serve with crackers. Keep these ingredients handy and whip up this amazing easy remoulade sauce for your next gathering.

Makes 16 (1/4-cup) servings

PREP TIME: 10 minutes

2 tablespoons light mayonnaise
2 tablespoons plain fat-free yogurt
2 tablespoons prepared horseradish
2 tablespoons mustard (Creole or grainy)
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1/3 cup chopped fresh parsley
1 bunch green onions, chopped
Salt and pepper to taste
2 pounds Louisiana crawfish tails, drained and rinse

1. In medium bowl, mix together mayonnaise, yogurt, horseradish, mustards, lemon juice, parsley, and onion. Season to taste.
2. Carefully stir in crawfish and refrigerate until serving time.
