In Louisiana we look forward to Louisiana crawfish season! Everyone always wants to know how to boil crawfish? My easy remoulade sauce recipe with Louisiana crawfish answers that question perfectly. What to make with those crawfish tails? This lighten-up, mouth-watering recipe is so delicious and it doesn’t have all the fat! Cajun cooking can be about eating healthy! Crawfish Remoulade is a delicious tailgate recipe  or perfect to serve at a dinner party.

Crawfish Remoulade from my Gulf Coast Favorites cookbook

A simple classic recipe with Louisiana crawfish mixed with spicy horseradish dressing.  Great on a bed of lettuce as a first course or light lunch  or with crackers as a dip.

Makes 16 (1/4-cup) servings

PREP TIME 10 minutes

2 tablespoons light mayonnaise
2 tablespoons plain fat-free yogurt
2 tablespoons prepared horseradish
2 tablespoons mustard (Creole or grainy)
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1/3 cup chopped fresh parsley
1 bunch green onions, chopped
Salt and pepper to taste
2 pounds Louisiana crawfish tails, drained and rinse

1. In medium bowl, mix together mayonnaise, yogurt, horseradish, mustards, lemon juice, parsley, and onions. Season to taste.
2. Next, stir in crawfish and refrigerate until serving time.
