Potato Salad is a must for the menu-but forget the mayo and try this healthier and tastier version, <strong>Southwestern Sweet Potato Salad</strong> with rich roasted Louisiana yams, combining Louisiana and southwestern into a colorful explosion of flavors. Roasting brings out an intense flavor. Always line the pan with foil for easy clean up!</p>
<p>This recipe will be a favorite that will go with whatever barbecue you throw on the pit. <p><strong>Southwestern Sweet Potato Salad </strong>from<a href="http://www.amazon.com/gp/product/0981564011?ie=UTF8&amp;tag=wwwhollyclegg-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=098156401-1"><strong> Too Hot in the Kitchen</strong></a><br />
6 cups peeled sweet potato (Louisiana yams) chunks (about 2 1/2 pounds)<br />
Salt and pepper to taste<br />
3 tablespoons olive oil, divided<br />
1/2 cup chopped red bell pepper<br />
1/2 cup chopped red onion<br />
2/3 cup frozen corn, thawed<br />
2/3 cup black beans, drained and rinsed<br />
1/4 cup chopped cilantro<br />
3 tablespoons lime juice<br />
1 teaspoon minced garlic<br />
1 tablespoon jarred jalapeno slices</p>
<p>1. Preheat oven 425°F. Coat foil lined baking sheet with nonstick cooking spray.<br />
2. On prepared pan, toss together sweet potatoes, salt and pepper and 1 tablespoon olive oil. Roast about 30 minutes or until potatoes are crisp. Cool.<br />
3. In large bowl, combine sweet potatoes, red bell pepper, red onion, corn, black beans and cilantro.<br />
4. In blender, puree lime juice, garlic, jalapeno and remaining 2 tablespoons olive oil. Toss with potato mixture and serve.<br />
Makes 12 (1/2-cup) servings</p>

<p><strong>Berry Good Oatmeal Cookie Cake</strong> from <a href="http://www.amazon.com/Holly-Cleggs-trim-TERRIFIC-Kitchen/dp/0981564011/ref=as_li_wdgt_ex?&amp;linkCode=waf&amp;tag=wwwhollyclegg-20">Too Hot in the kitchen cookbook</a><br />
A best ever luscious cookie cake picture perfect and perfect tasting.</p>
<p>Makes 12-16 servings</p>
<p>1/2 cup light brown sugar<br />
1 1/2 cups all-purpose flour<br />
1 teaspoon baking soda<br />
1 cup old-fashioned oatmeal<br />
1/2 cup butter, melted<br />
1 teaspoon vanilla extract<br />
1 egg<br />
6 ounces reduced-fat cream cheese<br />
2 tablespoons confectioners sugar<br />
1/2 teaspoon almond extract<br />
1/2 cup apricot preserves, divided<br />
2 cups raspberries<br />
2 cups sliced strawberries<br />
1 cup blueberries 1 tablespoon orange juice</p>
<p>1. Preheat oven 350°F. Coat 12-14-inch pizza pan with nonstick cooking spray.<br />
2. In large bowl, combine brown sugar, flour, baking soda, and oatmeal. Add melted butter, vanilla, and egg, mixing well.<br />
3. Press onto prepared pan, keeping dough 1-inch from edge of pan. Bake 10-12 minutes or until edges are set. Don’t overbake. Cool.<br />
4. In mixing bowl, beat together cream cheese, confectioners sugar, almond extract, and 1/4 cup apricot preserves until creamy. Spread on cooled crust and arrange fruit in design on pizza.<br />
5. In microwave-safe dish, heat remaining 1/4 cup apricot preserves and orange juice, just until melted. Spoon glaze over fruit. Refrigerate until serving.</p>

<div>Creamy coffee flavored punch is always a crowd favorite!</div>
<p>Makes 24-30 servings</p>
<p>2 quarts brewed coffee (flavored or decaffeinated coffee may be used), cooled to room temperature</p>
<p>3/4 cup sugar</p>
<p>1 tablespoon vanilla extract</p>
<p>2 cups fat-free half &amp; half</p>
<p>2 quarts fat-free vanilla ice cream or frozen vanilla yogurt, softened</p>
<p>1 (8-ounce) container frozen  fat-free whipped topping, thawed</p>
<p>Cocoa, optional for sprinkling</p>
<p>1. In large container, combine cooled coffee, sugar and vanilla.  Refrigerate until well chilled or overnight.</p>
<p>2.   When ready to serve, combine coffee mixture and half-&amp;-half.  In punch bowl, place ice cream and pour coffee milk mixture on top.</p>
<p>3.  Serve with dollop whipped topping and sprinkle with cocoa.</p>

<p>Makes 20 cheesecake cupcakes</p>
<p><span style="font-size: 13px; line-height: 19px;">20 chocolate sandwich cream cookies</span></p>
<p>2 (8-ounce) packages reduced-fat cream cheese</p>
<p>1/2 cup sugar</p>
<p>1 egg</p>
<p>2 egg whites</p>
<p>1/2 cup nonfat plain Greek yogurt</p>
<p>1 teaspoon vanilla extract</p>
<p>6 crushed chocolate sandwich cream cookies</p>
<p><span style="font-size: 13px; line-height: 19px;">1 Preheat oven 300F. Line muffin pan with paper liners.</span></p>
<p>2 Place one whole cookie in the bottom of each cupcake paper.</p>
<p>3 In mixing bowl, beat cream cheese and sugar until light. Gradually add egg and egg whites beating until creamy. Add yogurt and vanilla, mixing well. Stir in crushed cookies.</p>
<p>4 Divide batter between cookie filled cups. Bake 25-28 minutes or until filling set. Cool and refrigerate in pan about 2 hours.</p>

<p>This recipe has probably been my most requested and all-time favorite bar cookie for all ages. Best of all, it&#8217;s so easy and quick.</p>
<p>&nbsp;</p>
<p>Makes 48 squares</p>
<p>&nbsp;</p>
<p>1 (18.25-ounce) box yellow cake mix</p>
<p>1/2 cup butter, melted</p>
<p>1 egg</p>
<p>1 tablespoon water</p>
<p>1 (8-ounce) package reduced-fat cream cheese</p>
<p>1 (16-ounce) box confectioners’ sugar</p>
<p>2 egg whites</p>
<p>1 teaspoon vanilla extract</p>
<p>1 cup semisweet chocolate chips</p>
<p>&nbsp;</p>
<p>1.  Preheat oven to 350° F. Coat 13x9x2-inch baking pan with nonstick cooking spray.</p>
<p>2.  In mixing bowl, beat together cake mix, butter, egg, and water until well mixed. Spread batter into prepared pan.</p>
<p>3.  In mixing bowl, beat together cream cheese, confectioners’ sugar, egg whites, and vanilla. Stir in chocolate chips. Pour this mixture over batter in pan.</p>
<p>4.  Bake 40-50 minutes or until top is golden brown. Cool to room temperature and cut into squares.</p>

<p>Makes 6 servings (3/4-1 cup chicken, 1/2 cup spinach)</p>

<p>2 cups diced, skinless rotisserie chicken breast</p>
<p>1 cup edamame, cooked according to package directions</p>
<p>1/2 cup chopped sun-dried tomatoes, reconstituted</p>
<p>1 bunch green onions, chopped</p>
<p>1 cucumber, peeled and chopped</p>
<p>1/4 cup chopped fresh mint leaves or 1 tablespoon dried mint</p>
<p>2 teaspoons dried dill weed leaves</p>
<p>3 tablespoons apple cider or any vinegar</p>
<p>1 tablespoon lemon juice</p>
<p>2 tablespoons olive oil</p>
<p>3 cups packed baby spinach leaves</p>
<p>1/3 cup crumbled reduced-fat feta cheese</p>

<p>1. In large bowl, combine chicken, edamame, sun-dried tomatoes, green onion, cucumber, mint, and dill, mixing well.</p>

<p>Homemade goodies reserve a special place amongst the array of store bought gifts. One of my favorite gifts to give are quick breads. With so much going on this time of year, everyone is busy but no problem – quick breads are  easy to make and can be made ahead of time and frozen.  A great idea is to make different sizes, wrap with plastic wrap and tie together for gifts.  One recipe = 4 small loaf pans.</p>
<p>I promise, <strong>Chocolate Zucchini Bread</strong>, is one of my absolute favorite nutritious-and-delicious quick breads&#8211;even this ingredient combination.</p>
<p><strong>Chocolate Zucchini Bread</strong> from <a href="http://www.amazon.com/Holly-Cleggs-Terrific-Coast-Favorites/dp/0981564003/ref=pd_sim_b_4">Holly Clegg&#8217;s trim&amp;TERRIFIC Gulf Coast Favorites </a>cookbook</p>
<p>Just wrap the individual loaves in plastic wrap and store in a zip top freezer bag in the freezer until needed. Instead of one large loaf, I like to prepare the breads in different size loaf pans and give a combination of different loaves. Give one, two, or several types of bread, depending on how well you like the person.</p>
<p>Makes 16 slices</p>
<p>2 cups all-purpose flour<br />
3 tablespoons cocoa<br />
1 teaspoon baking soda<br />
1/4 teaspoon baking powder<br />
1 teaspoon ground cinnamon<br />
3/4 cup sugar<br />
2 eggs<br />
3 tablespoons canola oil<br />
1 cup applesauce<br />
1 teaspoon vanilla extract<br />
2 cups shredded zucchini<br />
1/3 cup semi-sweet chocolate chips<br />
1/2 cup coarsely chopped walnuts</p>
<p>1. Preheat oven 350°F. Coat a 9 × 5 × 3-inch nonstick loaf pan with nonstick cooking spray.<br />
2. In large bowl, combine flour, cocoa, baking soda, baking powder, and cinnamon.  Set aside.<br />
3. In another bowl, whisk together sugar, eggs, and oil. Stir in applesauce and vanilla. Add dry ingredients, mixing just until moistened. Stir in zucchini, chocolate chips, and walnuts.<br />
4. Transfer batter into prepared pan. Bake 45-55 minutes, or until a toothpick inserted into center comes out clean. Don&#8217;t overcook. Cool in pan.</p>

<p><em>Terrific Tidbit:</em> Zucchini is grated by using a grater or the shredding blade on a food processor.</p>

<p>Mini loaves of quick bread make wonderful homemade gifts. Make ahead, wrap in plastic wrap, place in zipper-lock bags, and freeze until ready to give.</p>

<p>1 egg, beaten</p>
