Chicken Cranberry Pecan Salad from Eating Well to Fight Arthritis cookbook

I raided the pantry to liven up leftover chicken and turned it into this outrageously delicious salad.

Makes 2 (about 1-cup) servings

1 cup cooked skinless chicken breast chunks
2 tablespoons coarsely chopped pecans, toasted
1/2 cup chopped green apple
3 tablespoons dried cranberries
2 tablespoons chopped red onion
3 tablespoons Greek nonfat plain yogurt
2 teaspoons light mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon dried thyme leaves
Salt and pepper to taste

1. In large bowl, combine chicken, pecans, apple, cranberries and onion.

2. In small bowl, mix together yogurt, mayonnaise, vinegar, and thyme. Toss with chicken mixture. Season to taste. Refrigerate at least an hour, or time permitted.

Are you wondering if crawfish is healthy? I Most people don’t realize the health benefits of crawfish.  We need to eat more seafood and who doesn’t like a burger? In fact, I have many diabetic crawfish recipes that are most popular even on GOOGLE!  Now, you know that ranks!  My Easy Crawfish Etouffee from Gulf Coast Favorites has always been the most sought out Cajun recipe but I bet this creation for  my Cajun Crawfish Burger recipe will rival it.



Cajun Crawfish Burgers with Horseradish Sauce from Gulf Coast Favorites

I decided to turn my most requested crawfish patties recipe I used for Crawfish Cakes into incredible Cajun Crawfish Burgers.  OMG is this fantastic and I am the biggest burger fan!  Remember wherever you live, only buy Louisiana crawfish tails.

Makes 8 burgers

1 cup saltine cracker crumbs
1 tablespoon Dijon mustard
2 tablespoons light mayonnaise
1 teaspoon hot sauce
1 bunch green onions, chopped
1/3 cup chopped fresh parsley
1/3 cup shredded, reduced-fat sharp Cheddar cheese
1 pound crawfish tails, rinsed and drained
Salt and pepper to taste
1 tablespoon olive oil
Flour
Horseradish Sauce (recipe follows)

1. In a medium bowl, carefully combine all ingredients except oil and flour.
2. Cover and chill 30 minutes, if time permits. Shape into 8 patties.
3. In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned.
4. Serve with Horseradish Sauce, if desired.

Best of spiced walnut recipes, these wonderful walnuts with a touch of spice, heat and sweet make incredible sweet spicy walnuts.  Toss in salads, serve on cheese trays or eat as a snack. You can easily turn this spiced walnut recipe into spiced pecans by switching to pecans.

Makes 8 (1/4 cup) servings

2 cups walnut halves or pecan halves
1 tablespoon sugar
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 tablespoon canola oil

1. Preheat oven 375°F.
2. Spread walnuts on baking sheet and bake about 5-7 minutes or until golden.
3. In small bowl, combine sugar, salt, garlic powder, cumin, cinnamon, and cayenne.
4. In nonstick skillet, heat oil over medium heat. Add nuts and stir to coat with oil. Add seasoning mix, stirring until nuts coated. Remove to paper towel to cool.

Brisket with Mango Barbecue Sauce from KITCHEN 101 cookbook

Finger-lickin’ best brisket recipes with a surprisingly few amount of ingredients. Serve with this irresistible Mango Barbecue Sauce as an entrée, sandwich or make brisket quesadillas for a knock-out recipe.  Remember, you can cook my BBQ beef brisket recipe in the oven also.

Makes 10 (4-ounce) servings

3 pound brisket, trimmed
1 tablespoon chili powder
2 teaspoons garlic powder
Pepper to taste
1 (12-ounce) can diet Dr. Pepper
Mango Barbecue Sauce (recipe follows)

1. Preheat oven 300°F.
2. Season brisket with chili powder, garlic powder and pepper. Place in roaster or slow cooker. Pour Dr. Pepper over top. Bake, covered, 5 hours or until tender. Serve with Mango Barbecue Sauce (see recipe).

Keep in the refrigerator to serve with any grilled meat or your best brisket recipes like this simple one!

1 onion, finely chopped
1/2 cup ketchup
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/3 cup mango chutney

1. In small pot coated with nonstick cooking spray, sauté onion until tender. Add remaining ingredients, cooking over low heat 10 minutes.

Use leftover brisket to create your next night’s meal! Easy to make and everyone will love your quesadillas.  Lay out tortillas and cover with shredded brisket, 1-2 tablespoons Mango Barbecue Sauce, Brie and red onions. Top with another tortilla. Cook in heated skillet until bottom is crisp, flip over, and cook another 1-2 minutes. Cut into fourths.

Makes 20 cheesecake cupcakes

2 (8-ounce) packages reduced-fat cream cheese
1/2 cup sugar
1 egg
2 egg whites
1/2 cup nonfat plain Greek yogurt
1 teaspoon vanilla extract
6 crushed chocolate sandwich cream cookies

1. Preheat oven 300 F. Line muffin pan with paper liners. (love these colorful rainbow papers)
2 Place one whole cookie in the bottom of each cupcake paper.
3 In mixing bowl, beat cream cheese and sugar until light. Gradually add egg and egg whites beating until creamy. Add yogurt and vanilla, mixing well. Stir in crushed cookies.
4 Divide batter between cookie filled cups. Bake 25-28 minutes or until filling set. Cool and refrigerate in pan about 2 hours.

Terrific Tip:  The kids love using all different colors of cupcake paper liners and so do I! If you don’t have a muffin pan, be sure to get a nonstick muffin tin they last for years!  I coat my papers with nonstick cooking spray!

Add Rice To Chicken Taco Salad Recipe For Hearty Healthy Chicken Taco Salad Recipe

There is a healthy combination of flavors with black beans, mixed greens and cherry tomatoes  for an amazing southwest chicken taco salad.  I love satisfying main dish salad recipes and I also think Rotisserie chicken was the greatest invention ever because it simplifies this recipe from Eating Well To Fight Arthritis.  This scrumptious salad makes a more substantial entree salad. More than just a salad, this entree chicken salad includes rice tossed with the greens. One of my favorite things to do with leftover chicken is to make main dish salad recipes–dinner the next day. I am always craving this recipe so I keep the ingredients on hand.

 Chicken Taco Rice Salad recipe from Eating Well to Fight Arthritis

This favorite toss-together southwest chicken taco salad includes simple ingredients and big flavor. This is one of those main dish salad recipes everyone raves about. This mixture with rice and mixed greens makes this main dish salad recipe a little different than your typical one.  I LOVE the Salsa Vinaigrette but you can use your favorite bottled vinaigrette too.

Makes 6 (2-cup) servings

1 (5-ounce) package yellow rice
6 cups mixed salad greens
2 cups skinless rotisserie chicken, shredded
1 (15-ounce) can black beans, rinsed and drained
1 cup grape or cherry tomato halves
1/2 cup chopped red onion
1/2 cup shredded, reduced-fat, sharp Cheddar cheese
Salsa Vinaigrette, (recipe follows)

1. Prepare rice according to package directions. Cool. Set aside.
2. In large bowl, combine cooled rice and all ingredients.  Toss with Salsa Vinaigrette (see recipe).

Salsa Vinaigrette

A few ingredients magically create this great-tasting vinaigrette. Save any leftover vinaigrette for another time. I use this vinaigrette on lots of southwestern salads and the Salsa Vinaigrette perfectly complements the southwest chicken taco salad recipe.

Makes 1 1/2 cups

1 cup salsa
2 teaspoons chili powder
1/2 teaspoon ground cumin
1 tablespoon lime juice
2 tablespoons olive oil

1. In small bowl, whisk together all ingredients.

Best of Chicken Orzo Recipes!

Chicken Orzo Salad from Gulf Coast Favorites cookbook 

You’ll love this fantastic, marinated diabetic-friendly entree salad that combines bold flavors with great ingredients. One of my favorite chicken orzo recipes!  Weight Watcher SmartPoints

Makes 12 (1/2-cup) servings

2 cups orzo pasta
2 cups diced, rotisserie, skinless white chicken
1 cup frozen peas, thawed, or shelled edamame
1/2 cup chopped green onions
1/2 cup crumbled reduced-fat feta cheese
1 cucumber, peeled and chopped
8 ounces sun-dried tomatoes, sliced, reconstituted, reserving 1/3 cup water from reconstituting tomatoes
2 teaspoons dried dill weed
1 tablespoon lemon juice
2 tablespoons rice vinegar
2 tablespoons olive oil
1 teaspoon garlic

1. Cook orzo according to package directions. Drain.
2. In large bowl, combine orzo, chicken, peas, green onions, feta, cucumber, tomatoes, and dill.
3. In another bowl, whisk together reserved sun dried tomato water with remaining ingredients.
4. Toss with orzo mixture. Refrigerate for at least 1 hour before serving.

Terrific Tidbit:  To reconstitute the tomatoes, pour 1 cup boiling water over them.  Let sit for 15 minutes or until soft.

In fact, I made them not long ago to bring to the hospital when someone was there and the nurses couldn’t get enough!  In KITCHEN 101, all freezer-friendly recipes are highlighted with a snowflake.   Most cookies freeze great. Ooey Gooey Bars from KITCHEN 101

Here’s my amazing, simple Ooey Gooey Butter Cake recipe.  As I have said, it has probably been my most requested and all-time favorite bar cookie for all ages. Best of all, it’s so easy and quick.

Makes 48 squares

1 (18.25-ounce) box yellow cake mix
1/2 cup butter, melted
1 egg
1 tablespoon water
1 (8-ounce) package reduced-fat cream cheese
1 (16-ounce) box confectioners’ sugar
2 egg whites
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

1. Preheat oven 350° F. Coat 13x9x2-inch baking pan with nonstick cooking spray.
2. In mixing bowl, beat together cake mix, butter, egg, and water until well mixed. Spread batter into prepared pan.
3. In mixing bowl, beat together cream cheese, confectioners’ sugar, egg whites, and vanilla. Stir in chocolate chips. Pour this mixture over batter in pan.
4. Bake 40-50 minutes or until top is golden brown. Cool to room temperature and cut into squares.

Get The Scoop on How My Asian Burger Recipes are Healthy Burgers

Did you know when you are cooking with meat to make sure and look for the leanest cuts.  Your ‘leanest cuts of beef end in a “round” or “loin.”  You got it-ground sirloin, pork tenderloin, ground round.  Sometimes, the lean ground beef is even better for you than ground turkey depending on your turkey mixture you buy.  I don’t use a lot of filling but Panko bread crumbs and an egg to hold it together. To Grill or Not To Grill My Asian Burgers

Honestly, these homemade burgers are so good you don’t even have to grill them.  I know it is hard to believe but we don’t grill a lot.  I wish we did!  So, I usually end up cooking my Asian burger recipe in a nonstick grill pan. I do think grilling makes everything taste better but I promise these are delicious even without a grill.  I love my grill pan and if you don’t have one, I think you will enjoy it. Make My Asian Burger Recipe Ahead of Time for Meal Planning

I know everyone is into meal planning these days and I get it.  We are all busy but that’s why I only include quick healthy recipes in KITCHEN 101!  I make up my ground meat mixture for these Asian burgers and wrap individually in plastic wrap before cooking. Then I put them in a freezer-plastic bag and keep in my freezer to pull out for a last minute great homemade burger. Whether you put on the outside grill or use a grill pan, you have a great hamburger recipe.

Ok, I love my Asian Burger recipes so when it comes time to entertaining for parties or tailgating I make Asian Burger Sliders. Basically the same recipe but I top the Asian burgers with this simple delicious Pineapple Salsa.  You can also add a little extra hoisin sauce to glaze the burgers.

Asian Burgers from KITCHEN 101 cookbook

Like Asian food — wait until you try  my easy Asian burger recipe which I think is the best of Asian hamburger recipes! Toss together in one bowl and cook.  I do like using fresh ginger but ground ginger works too.

Makes 4 Asian burgers

1 pound ground sirloin
1/4 cup panko bread crumbs
1/3 cup chopped green onions
1 egg, lightly beaten
1 teaspoon minced garlic
1 tablespoon hoisin sauce
1 tablespoon low-sodium soy sauce
1 tablespoon finely chopped fresh ginger or 1 teaspoon ground ginger
Pepper to taste

1. In large bowl, combine all ingredients until well mixed. Form into four patties. Grill or cook in skillet until done.

Banana Chocolate Chip Bread from Holly Clegg’s trim&TERRIFIC Eating Well To Fight Arthritis 

What can be better than a rich moist chocolate chip banana bread recipe — need I say more? If you have ripe bananas, you probably have all the other ingredients in the house.

Makes 16 slices

1/4 cup canola oil
1/2 cup light brown sugar
1/4 cup sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 cups mashed bananas (3-4 ripe bananas)
1 1/2 cups all-purpose flour
1/4 cup cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup skim milk
1/2 cup dark or semisweet chocolate chips
1/2 cup chopped pecans

1. Preheat oven 350°F. Coat 9x5x3-inch loaf pan with nonstick cooking spray.
2. In mixing bowl, beat oil, brown sugar, sugar and vanilla until creamy. Add eggs, mixing well. Add bananas.
3. In small bowl, combine flour, cocoa, baking soda and baking powder. Stir in flour mixture and milk; mixing only until combined. Stir in chocolate chips and pecans. Transfer batter into prepared pan.
4. Bake 45-50 minutes, or until a toothpick inserted in the center comes out almost clean.
