Update Your Old Salsa with Fiesta Salsa

Who doesn’t like chips and dip? If you are looking for an update to the same old salsa, then Fiesta Salsa from Too Hot in the Kitchen cookbook is where it’s at! So easy to throw together you will have everyone thinking you made a gourmet appetizer! Color equals nutrition and these blasts of colors create a favorite in my home. I love avocados and with the tomatoes, corn, green chilies and green onions, you have a quick salsa recip.  Taking only minutes to prepare, my family requests this recipe so often, and there’s never any left. Perfect to serve for game days and even holidays.

Fiesta Salsa Simple-to-Make Recipe with Lots of Avocado

I love this recipe as it doubles as a condiment or salad.  Serve with chicken or fish as a side salad. Easy to make!  Sometimes you just need a quick dip that if fresh but with minimal preparation.  Pick up these few ingrdients to whip up my favorite salsa.  Probably because it includes avoacados.  If you know me I am an avocado addict!

Fiesta Salsa from Too Hot in the Kitchen:  Secrets to Sizzle At Any Age

Makes 14 (1/4-cup) servings

2 avocados, peeled, pitted, and chopped
1 pint cherry tomatoes, quartered, or grape tomatoes, halved
1 cup frozen corn, thawed
1 (4-ounce) can chopped green chilies, drained
1 bunch green onions, chopped
3 tablespoons lime juice
1/2 teaspoon sugar
Salt and pepper to taste

1. In large bowl, carefully toss together avocados, tomatoes, corn, green chilies, green onions, lime juice, sugar, salt, and pepper.

Terrific Tidbit: To prevent discoloration and enhance the flavor of leftover avocado, simply mash the remaining flesh and combine it with lemon or lime juice in a ratio of a 1/2 teaspoon per half mashed avocado. Cover with plastic wrap and refrigerate for up to two days.
