<p>Who Dat!!! Go Saints, it&#8217;s a black and gold Super Bowl!!! My husband and I had some friends over to watch the game last night and we used our new grill (a gift from Chad&#8217;s parent&#8217;s for our wedding anniversary). It&#8217;s the new infared kind, he couldn&#8217;t wait to use it and I must say it produced some juicy steaks. I&#8217;m sure it didn&#8217;t hurt they were Omaha Steaks, but they were so moist! We also made a green bean casserole, salad and yummy cresent roll bread dish. And of course we had dessert, <a title="Ooey Gooey Squares" href="http://www.hollyclegg.com/Recipe.cfm?id=486">Ooey Gooey Squares</a>, from my mom&#8217;s <a title="The New Holly Clegg trim&amp;TERRIFIC Cookbook" href="http://www.amazon.com/gp/product/0762425997?ie=UTF8&amp;tag=wwwhollyclegg-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=0762425997">The New Holly Clegg trim&amp;TERRIFIC Cookbook</a>, and I don&#8217;t think I overcooked them this time. Finally&#8230;</p>
<p>Also, we ate at two really good restaruants this weekend with some friends. A FAVORITE of mine <a href="http://www.victortangos.com" target="_blank">Victor Tango&#8217;s</a> and <a href="http://www.sitapasdallas.com" target="_blank">Si Tapas</a> which I&#8217;d never been to (both in Dallas)! At VT&#8217;s we had miso glazed sea bass scewers, chicken and waffles, ahi tuna nachos, and braised short rib with a rutabaga mash, which I must admit was awesome and i thought was some type of mashed potato at first. We had a vareity of tapas at Si Tapas, however, I really wanted the Paella, a favorite meal of mine. Next time, Chad said he&#8217;d go back with me <img src='http://thehealthycookingblog.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

My go-to appetizer for last-minute guests are my absolute favorite Mini Muffalettas.  I make plenty ahead of time and keep them in the freezer for the perfect snack or party food for quick and easy entertaining. The mix of sweet bread and salty olive salad with creamy cheese and ham is SO delicious! You will want to keep them on-hand too!  Oh, and sometimes I use sliced turkey-if you don&#8217;t want ham.  I think any time you come to my house, I have these in the freezer&#8230;as many times I pull out for my afternoon snack.</p>

</a></em>All it takes is four easy ingredients and 15 minutes to create my popular version of this Louisiana favorite Italian-style sandwich. Make them ahead of time and refrigerate or freeze until ready to bake.</p>
<p>Makes 32 &#8211; 40 Mini Muffalettas</p>
<p>2 (12-ounce) packages party-size rolls (16-20 to a package)<br />
1/2 pound thinly sliced lean ham<br />
1 1/2 cups shredded Italian five-cheese blend<br />
1 (16-ounce) jar chopped Italian olive salad, drained</p>
<p>1. Preheat oven 375°F.<br />
2. Split rolls in half, lay on baking sheet. Divide ham, cheese, and olive salad onto each roll.<br />
3. Replace bread tops. Bake 10-15 minutes or until cheese is melted.</p>

<p>TERRIFIC TIDBIT: Any combination of cheese may be used such as mozzarella, provolone, or Parmesan. Freeze Muffalettas before baking.</p>
