Strawberry Cheesecake Parfait from Holly Clegg’s KITCHEN 101 cookbook

This is a fabulous no bake strawberry cheesecake dessert and a healthy cheesecake recipe in one fabulous indulgence! This berry cheesecake recipe combination is perfect for people who love an easy no bake strawberry cheesecake.. I turned this recipe into Strawberry Cheesecake Parfait! It has Weight Watcher SmartPoints.

Makes 8 parfaits

1 pound strawberries, stemmed and sliced
1 tablespoons sugar
1 (8-ounce) reduced-fat cream cheese
1/2 cup plain or vanilla nonfat Greek yogurt
1/2 cup confectioners’ sugar
1 teaspoon almond extract
1 1/2 cups frozen nonfat whipped topping, thawed, divided
2/3 cup graham cracker crumbs
Mint, garnish, optional

1. In bowl, sprinkle strawberries with sugar and toss. Set aside.
2. In mixing bowl, beat cream cheese, yogurt, confectioners sugar and almond extract until smooth. Fold in 1/2 cup whipped topping.
3. To assemble parfaits, in small dish or glass, layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers if small enough dish.  Then, top with dollop of whipped topping. Garnish with mint, if desired.

Terrific Tips: Use any berry combination. Also,when a recipe calls for yogurt or Greek yogurt, use either.  However, I like Greek yogurt because it’s a richer, creamier and thicker yogurt. Actually, Greek yogurt has more health benefits too.
