Serve No Bake Cheesecake Recipe in Fancy Glasses

Seasonal Louisiana strawberries are so sweet and juicy.  This Strawberry Cheesecake Parfait recipe is out of this world and it makes quite an impression! Serve in single serving cups for a beautiful display.  I like to use red wine glasses or even martini glasses because they really add to the tablescape decor. However, you can always make the dessert in in a bowl or even a trifle bowl.

This is a a fabulous no bake cheesecake dessert and a healthy cheesecake recipe in one fabulous indulgence! This berry cheesecake recipe combination is perfect for people who love strawberry cheesecake, and want an easy cheesecake recipe. It has Weight Watcher SmartPoints.

Makes 8 parfaits

1 pound strawberries, stemmed and sliced
1 tablespoons sugar
1 (8-ounce) reduced-fat cream cheese
1/2 cup plain or vanilla nonfat Greek yogurt
1/2 cup confectioners’ sugar
1 teaspoon almond extract
1 1/2 cups frozen nonfat whipped topping, thawed, divided
2/3 cup graham cracker crumbs
Mint, garnish, optional

1. In bowl, sprinkle strawberries with sugar and toss. Then set aside.
2. In mixing bowl, beat cream cheese, yogurt, confectioners sugar and almond extract until smooth. Fold in 1/2 cup whipped topping.
3. To assemble parfaits, in small dish or glass, layer graham cracker crumbs, cream cheese filling, and strawberries. Then, repeat layers if small enough dish.  Finally, top with dollop of whipped topping. Also, garnish with mint, if desired.

Terrific Tips: Any berries or a combination of berries may be used.  Also,when a recipe calls for yogurt or Greek yogurt, either is fine to use.  However, I like Greek yogurt because it’s a richer, creamier and thicker yogurt and actually Greek yogurt has more health benefits too.
