Ingredients
- 2/3 cup medium peeled shrimp
- 2 cups cherry tomatoes
- 1 inch medium onion sliced ½thick
- 1/3 cup fat free Italian dressing
- Skewers
- 1 thin pizza crust
- 2 tablespoons olive oil
- 1 cup shredded part-skim mozzarella cheese
- 2 tablespoons fresh chopped basil

Instructions
- Marinate shrimp, tomatoes and onion in Italian dressing 30 minutes, time permitting. Skewer shrimp and tomatoes separately and put onion slices directly on grill, discard marinade.
- Coat grill with nonstick cooking spray. Cook shrimp about 3-6 minutes, turning until shrimp are done. Cook tomatoes on high about 2-3 minutes or until begin to pop. Cook onions on high about 5 minutes, turning. Remove; set aside.
- Coat each side of pizza crust with olive oil. Grill one side pizza crust on medium high about 2 minutes, flip and turn grill to low. Top with cheese, grilled shrimp, tomatoes and onion. Continue cooking about 2 minutes or until cheese melted. Remove from heat and sprinkle with basil.

Terrific Tip: If using wooden skewers, be sure to soak in water to keep from burning. This pizza works great with fresh dough or pizza dough in a can. Be sure to oil the dough to keep from sticking and cook on one side until lightly browned, and flip to cook on the other side. Top with ingredients.
Serving suggestion: Leave out the shrimp for the most perfect Margherita pizza.
