Makes 12-16 servings

1/2 cup light brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup old-fashioned oatmeal
1/2 cup butter, melted
1 teaspoon vanilla extract
1 egg
6 ounces reduced-fat cream cheese
2 tablespoons confectioners sugar
1/2 teaspoon almond extract
1/2 cup apricot preserves, divided
2 cups raspberries
2 cups sliced strawberries
1 cup blueberries 1 tablespoon orange juiceBerry Good Cookie Cake

1. Preheat oven 350°F. Coat 12-14-inch pizza pan with nonstick cooking spray.
2. In large bowl, combine brown sugar, flour, baking soda, and oatmeal. Add melted butter, vanilla, and egg, mixing well.
3. Press onto prepared pan, keeping dough 1-inch from edge of pan. Bake 10-12 minutes or until edges are set. Don’t over bake. Cool.
4. In mixing bowl, beat together cream cheese, confectioners sugar, almond extract, and 1/4 cup apricot preserves until creamy. Spread on cooled crust and arrange fruit in design on pizza.
5. In microwave-safe dish, heat remaining 1/4 cup apricot preserves and orange juice, just until melted. Spoon glaze over fruit. Refrigerate until serving.

2 pounds fresh salmon fillets, skinned
1/2 cup chopped green onions
1/2 teaspoon minced garlic
2 tablespoons lemon juice
1/2 teaspoon dried dill weed
Salt and pepper to taste
1 egg
1 egg white
2 cups crisp rice cereal

1. With knife or food processor, chop salmon into small pieces.
2. In large bowl, mix together salmon, green onions, garlic, lemon juice, dill and season to taste.
3. In another bowl, whisk together egg and egg white and add to salmon mixture.
4. Using your hands, gently mix salmon mixture with cereal (mixture will be loose). Form mixture into burgers.
5. Heat large nonstick skillet coated with nonstick cooking spray over medium heat. Cook about 3-4 minutes on each side or until salmon flakes with fork.

Terrific Tip: Salmon patties may be made ahead of time and refrigerated until ready to cook. If grilling, place salmon patties in freezer for about 20-30 minutes and they will hold together better. Salmon is a rich source of heart healthy omega-3 fatty acids, reducing the risk of heart disease.

Southwestern Sweet Potato Salad from Eating Well to Fight Arthritis

Makes 12 (1/2-cup) servings

6 cups peeled sweet potato (Louisiana yams) chunks (about 2 1/2 pounds)
Salt and pepper to taste
3 tablespoons olive oil, divided
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
2/3 cup frozen corn, thawed
2/3 cup black beans, drained and rinsed
1/4 cup chopped cilantro
3 tablespoons lime juice
1 teaspoon minced garlic
1 tablespoon jarred jalapeno slices

1. Preheat oven 425°F. Coat foil lined baking sheet with nonstick cooking spray.
2. On prepared pan, toss together sweet potatoes, salt and pepper and 1 tablespoon olive oil. Roast about 30 minutes or until potatoes are crisp. Cool.
3. In large bowl, combine sweet potatoes, red bell pepper, red onion, corn, black beans and cilantro.
4. In blender, puree lime juice, garlic, jalapeno and remaining 2 tablespoons olive oil. Toss with potato mixture and serve.

You’ll enjoy this refreshing coleslaw with cool flavors of cucumber, lime and mint contrasted with crunchy peanuts and sweet mandarin oranges.

Makes 10 (1/2-cup) servings

4 cups shredded cabbage (bag coleslaw)
1 bunch green onions, chopped
1/2 cup chopped red onion
1/2 cup chopped cucumber
2 tablespoons lime juice
2 tablespoons cider or seasoned rice vinegar
1 tablespoon olive oil
1 (11-ounce) can mandarin oranges, drained
2 tablespoons chopped fresh mint
1/4 cup coarsely chopped peanuts

1.In large bowl, combine cabbage, green onions, red onion, and cucumber. In small bowl, whisk together lime juice, vinegar and oil; pour over slaw and mix.
2.Carefully add mandarin oranges. To serve, add mint and peanuts, mixing well. Season to taste.

When I think of Cinco de Mayo recipes, three favorites come to mind, all different but all have margarita in their title and taste,and all from my cookbook, Too Hot in the Kitchen:  Secrets to Sizzle at Any Age (a fun cookbook great for mom, sister, friend or you filled with easy, trendy recipes!  Margarita Shrimp (see recipe below) can be used as an appetizer or an entree and wow are the flavors fantastic.  And, nothing is better than my easy Margarita Cake from Too Hot in the Kitchen. Sweet and salty, light and refreshing,and  starts with a white cake mix flavored with non-alcoholic margarita mix and lime, on a pretzel crust makes quite an “ole!”  Last,  yes, a margarita can be good for your skin with my Margarita Salt Body Buffer from Too Hot in the Kitchen.  Lime and tequila are natural antiseptics so help detoxify skin and improve tone and texture. Margarita Shrimp from Too Hot in the Kitchen 

All the margarita makings in this recipe will put you in the mood and the fiesta of flavors will insure fun. I like to serve with avocado slices as an appetizer.  Orange juice may be substituted for orange liqueur.

Makes 4 servings

4 tablespoons orange liqueur, divided
3 tablespoons lime juice, divided
2 tablespoons tequila
2 tablespoons olive oil, divided
1/2 teaspoon minced garlic
1/2 fresh jalapeno pepper, seeded and minced
Salt to taste
2 tablespoons finely chopped fresh cilantro
1 1/2 pounds medium-large peeled shrimp
1 tablespoon all-purpose flour
3/4 cup fat-free chicken broth
Finely chopped cilantro, garnish

1  .Combine 1 tablespoon orange liqueur, 1 tablespoon lime juice, tequila, 1 tablespoon olive oil, garlic, jalapeno pepper, salt and cilantro in resealable plastic bag; add shrimp. Refrigerate 1 hour.
2. In large nonstick skillet, add shrimp, discarding marinade and cook until shrimp are done, about 5-7 minutes. Remove from pan.
3.  In same pan, add remaining 1 tablespoon oil, and add flour, stirring for one minute. Gradually add chicken broth, stirring, and bring to boil, cooking until thickened.
4.  Stir in remaining 3 tablespoons orange liqueur and 2 tablespoons lime juice. Heat and return shrimp to pan. Serve. Sprinkle with cilantro, if desired.

Juice of one lime
2 ounces olive oil
3/4 ounces white tequila

1. In bowl, mix together sea salt, olive oil, lime, and white tequila. In the shower, rub mixture onto damp skin in gentle circular motion. If salt feels too gritty, add more olive oil.

1 10-pound fully cooked bone in ham

Glazed Ham with Pecan Crust

2 cups apple cider
1 cup light brown sugar
1 tablespoon Dijon mustard
1 1/2 cups finely chopped pecans

1.Preheat oven 325°F. Insert meat thermometer into center of ham without touching bone. Place ham in baking dish, pour cider over.
2. Roast in oven, basting with cider every 30 minutes for total cooking time of 12 – 15 minutes per pound or until thermometer registers 140°F.
3. Meanwhile, in bowl, combine brown sugar, mustard and pecans. Remove ham from oven last 40 minutes, firmly pat sugar pecan mixture all over ham. Return to oven, continue roasting until crust is brown and ham is done.
4. Slice and serve with sauce. Some of topping falls into sauce making it the perfect accompaniment to ham.

Easy Easter Recipes for Dessert but my Luscious Lemon Pie Screams Spring

I have a sweet tooth which means I have a ton of easy dessert recipes but honestly, I have heard more people tell me that my 5 ingredient Lemon Pie is their “go-to” dessert because simple to make and everyone raves about this luscious lemon dessert.  I serve with fresh berries and for those cheese cake, lovers, this will win you over too.

Lemon Pie from Too Hot in the Kitchen Cookbook
So simple, yet divine, a cross between a cheesecake and pie. Serve with fresh berries.

Makes 8-10 servings

1 (8-ounce) package reduced-fat cream cheese
1 (14-ounce) can fat-free sweetened condensed milk                                                                                             Easy Easter Recipes-Lemon Pie
1/2 cup lemon juice
1 tablespoon grated lemon rind
1 (9-inch) prepared graham cracker crust

1. In mixing bowl, mix together cream cheese, sweetened condensed milk, and lemon juice until smooth and creamy. Stir in lemon rind.
2. Transfer to graham cracker crust. Refrigerate until firm, 4 hours.

King Cake with Cream Cheese Cinnamon Filling from trim&TERRIFIC Gulf Coast Favorites (all your Louisiana favorites-healthier).  Check out  YouTube video to watch me making this delicious treat!

Halloween use orange & black, Thanksgiving use autumn colors, Christmas use holiday colors, Valentine’s Day go pink, St. Paddy’s Day go green and Easter’s pastel colors for your icing instead of Mardi Gras colors.

Makes 16 servings

2 (8-ounce) cans reduced-fat crescent rolls
4 ounces reduced-fat cream cheese
2 tablespoons confectioners’ sugar
1 teaspoon vanilla extract
2 tablespoons butter
1/3 cup light brown sugar
1 tablespoon ground cinnamon

1. Preheat oven 350°F. Coat 10-inch round pizza pan with nonstick cooking spray.
2. Separate crescent rolls at perforations, into 16 slices. Place slices around prepared pan with points in center. About halfway down from points, press seams together.
3. In mixing bowl, beat cream cheese, confectioners’ sugar, and vanilla until creamy. Spread on dough in center where seams have been pressed together.
4. In another small bowl, combine butter, brown sugar, and cinnamon with fork until crumbly. Sprinkle over cream cheese. Fold dough points over filling, then fold bottom of triangle over points forming a circular roll like a king cake.
5. Bake 20-25 minutes or until golden brown. Cool slightly, drizzle with colored Mardi Gras Icing.

Easter King Cake Icing:

1 cup confectioners’ sugar
1-2 tablespoons skim milk
1/2 teaspoon vanilla extract
Pink or Pastel food coloring

1. In small bowl, combine all ingredients.   Drizzle over baked cooled cake.
