Eight Layered Greek DipMy Go-to Entertaining Recipe

Whenever I have company, a meeting or crave my favorite spread, I turn to this recipe in my cookbook, Too Hot in the Kitchen.  When the people behind Jumpstart came to my house…of course, I whipped up this appetizer.  I was delighted to be asked to support them–their goal is to label healthy food in the grocery stores and to have healthier meals in the schools.  So, of course, I served food to the group.  This is my favorite entertaining recipe and best of all, I am having the leftover dip now with a glass of wine.  You will be hearing lots about Jumpstart with me in the near future.  And, every time I entertain, I alawys make this as my go-to recipe-no one can believe the recipe is also diabetic-friendly and –and believe me, I have calls for people searching for it.

This captivating dip layered with fantastic flavors is a show-stopper! Feel free to double this recipe and watch it disappear. Serve with Toasted Pita Wedges.

Eight Layered Greek Dip from Too Hot in the Kitchen cookbooks

This is my go-to make-ahead recipe when I want an impressive knockout appetizer. Move over Mexican – this Eight Layered Greek Dip will be your new party favorite-it is mine. Serve with pita chips.

Makes 10 servings

1 (10-ounce) container roasted red pepper hummus

1 cup coarsely chopped fresh baby spinach

1/2 cup chopped sun-dried tomatoes, reconstituted

1/2 cup chopped peeled cucumber

1/4 cup chopped red onion

1/4 cup crumbled reduced-fat feta cheese or crumbled goat cheese

2 tablespoons sliced Kalamata olives

1/4 cup chopped pecans, toasted

1. Spread hummus on 9-inch serving plate.

2.  Sprinkle evenly with remaining ingredients, refrigerate until serving time.
