Banana Oatmeal Pancakes
Whip up these easy, great morning banana oatmeal pancakes with an added dose of “good for you” ingredients. Keep in your freezer to pull out. One of my favorite kitchen gadgets is the Immersion blender and I use it for this recipe always. Freezer friendly, Vegetarian, Gluten Free, Diabetic friendly

Ingredients
  • 2cups old-fashioned oatmeal
  • 2cups water
  • 1 bananacut into chunks
  • 2tablespoons maple syrup or honey
  • dash salt
  • 1teaspoon vanilla extract
Instructions
  1. With an immersion blender or in food processor, add all ingredients; blend until smooth. Let stand 5 minutes until batter thickens.
  2. In nonstick skillet coasted with nonstick cooking spray, pour about 1/4–1/3 cup batter into pan and cook 2–3 minutes on each side or until golden brown.
