  • 1/4cup canola oil
  • 1cup dark brown sugar
  • 2 eggs
  • 1cup mashed bananasabout 2 bananas
  • 1teaspoon vanilla extract
  • 1 3/4cups all-purpose flour
  • 1teaspoon baking soda
  • 1teaspoon baking powder
  • 1teaspoon ground cinnamon
  • 1/4cup skim milk
  • 1/2cup butterscotch chips
  • 1/2cup chopped pecansoptional

Instructions
  1. Preheat oven to 350°F. Coat non-stick 9 x 5 x 3-inch loaf pan with non-stick cooking spray.
  2. In large bowl, beat together oil and brown sugar. Add eggs, bananas, and vanilla, stirring well.
  3. In another bowl, combine flour, baking soda, baking powder, and cinnamon. Gradually combine dry ingredients and milk with banana mixture, stirring only until combined.
  4. Pour batter into prepared loaf pan and bake 45 -50 minutes or until a toothpick inserted in center comes out clean.
