Crawfish Deluxe Pizza
Crawfish and a great assortment of my favorite fresh ingredients make this an amazing pizza.

Ingredients
  • 1 thin pizza crust12-inch
  • 1tablespoon olive oil
  • 1tablespoon minced garlic
  • 1tablespoon dried basil leaves
  • 1/4pound sliced mushrooms
  • 2cups fresh baby spinach
  • 1/2pound cookedseasoned peeled crawfish
  • 1/2cup chopped tomatoes
  • 1/4cup chopped red onion
  • 1/4pound fresh mozzarella cheesesliced or 1 cup shredded, part-skim, mozzarella cheese
Instructions
  1. Preheat oven 400ºF. Cover crust with olive oil and garlic. Sprinkle with basil.
  2. In small nonstick skillet coated with nonstick cooking spray, sauté the mushrooms for about 5 minutes or until tender. Add spinach and stir until wilted.
  3. Evenly spoon spinach mixture, crawfish, tomatoes, red onion, and cheese on top of crust. Bake 8–10 minutes or until cheese is melted and crust is browned.

Terrific Tidbit: Fresh mozzarella cheese is found in the deli section. Fresh mozzarella has a different texture and tastes different than the packaged mozzarella cheese and is slightly higher in fat.  However, I think there is no comparison with the flavor so give it a try!
