Fig, Caramelized Onion, Prosciutto & Goat Cheese Pizza
Another one of my favorite fresh fig recipes is my Fresh Fig Bundt Cake which is moist and a real treat during fig season. Next time you see  fresh figs in the grocery, you now have some simple, delicious easy fig recipes. Remember, they are high in fiber and potassium, combined with sweet caramelized onion, salty prosciutto and creamy goat cheese turn pizza into a palate pleasing masterpiece. Sometimes I use fig preserves for the marmalade.

Ingredients
  • 1tablespoon teaspoon plus 1olive oildivided
  • 1 small onionthinly sliced
  • Pinch of sugar
  • 1 thin pizza crust12-ounce
  • 2tablespoons orange marmalade or fig preserves
  • 4ounces figssliced in thirds
  • 2ounces prosciuttocut into pieces
  • 1/2cup crumbled goat cheese
  • 1/4cup shredded part-skim mozzarella cheese
  • 1teaspoon dried rosemary leavesoptional
Instructions
  1. In small nonstick skillet, heat 1 teaspoon olive oil and sauté onion, stirring occasionally, about 10 minutes until start to turn golden. Add sugar and continue cooking until caramel color. Set aside to cool.
  2. Preheat oven 450°F. On pizza crust, spread remaining 1 tablespoon olive oil and cover with orange marmalade. Arrange cooled onions, figs, prosciutto, goat cheese and mozzarella on crust.
  3. Sprinkle with rosemary, if desired. Bake 10-15 minutes or until cheese is melted and crust crisp.
