Oven Baked Shrimp Scampi
My healthy shrimp scampi recipe is rich tasting oven-baked Italian seasoned shrimp topped with a crispy topping  and is actually super easy to make and will delight the senses.

Ingredients
  • 1lb medium large shrimppeeled
  • 2tbsp olive oil
  • 2tbsp white wine
  • 1tsp garlicminced
  • 1tsp dried oregano leaves
  • salt and pepper to taste
  • 1tbsp buttermelted
  • 1/2cup green onionschopped
  • 3tbsp lemon juice
  • 1 1/2cup Panko bread crumbs
Instructions
  1. In shallow baking dish combine shrimp, olive oil, wine, garlic, oregano and season to taste. Let sit about 10 minutes
  2. Preheat oven 425°F.
  3. In bowl, mix together butter, green onions, lemon juice and Panko bread crumbs. Sprinkle evenly over shrimp in marinade. Bake 20-25 minutes (don’t over bake) or until shrimp are done.
