Ingredients
  • 1 can black-eyed peasdrained and rinsed, 15-ounce
  • 1/4cup finely chopped green bell pepper
  • 1/3cup finely chopped tomatoes
  • 1/3cup finely chopped red onion
  • 1/3cup finely chopped green onions
  • 1/3cup frozen or canned corn
  • 1tablespoon finely chopped jalapeñosfound in jar
  • 3tablespoons red wine vinegar or seasoned red wine vinegar
  • 2teaspoons olive oil
Instructions
  1. In a bowl, combine all the ingredients. Cover and marinate at room temperature for 2–3 hours, stirring occasionally. Refrigerate after serving.
