Roasted Tomatoes (optional)
Ingredients
  • 3cups coarsely chopped fresh tomatoes
  • 2tablespoons olive oil
  • 1tablespoon teaspoon dried basil leaves or 1fresh basil
  • salt and pepper to taste
Instructions
  1. Preheat oven 425°F. Line baking sheet with foil.
  2. On prepared pan, combine tomatoes, oil, basil and season to taste. Roast 25-30 minutes or until done and slightly blackened.

Terrific Tip: Try using roasted fresh tomatoes for the canned (see recipe). If roasting fresh tomatoes, use 2 tablespoons olive oil in cooking and 1 tablespoon olive oil roasting tomatoes.
