Shrimp and Italian Sausage Fettuccine
This exceptionally flavorful dish combines lightly cola sweetened Italian sausage with fettuccine, creating a dramatic pasta finale that will tantalize your taste buds.

Ingredients
  • 1 package fettuccine12-ounce
  • 8ounces Italian sausagecrumbled
  • 1cup diet cola
  • 1pound medium peeled shrimp
  • 1 can diced tomatoes and green chilies10-ounce
  • 1tablespoon minced garlic
  • 1/2cup white wine or cooking wine
  • 1cup chopped fresh flat-leaf Italian parsley
  • 1 bunch green onionschopped
  • 1/4pound fresh mozzarellacut into small pieces (optional)
Instructions
  1. Cook pasta according to package directions, omitting any salt or oil. Drain and set aside.
  2. In nonstick skillet, cook sausage over medium heat until browned. Remove from heat and gradually add cola, stirring. Return to heat and cook until cola is reduced to 1/4 cup, about 10 minutes. Set aside.
  3. In another large nonstick skillet coated with nonstick cooking spray, sauteĢ shrimp about a minute. Add tomatoes and green chilies and garlic, cooking 3 minutes. Add wine, cooking and stirring until shrimp are done. Stir in parsley and green onions, cooking one minute.
  4. Toss pasta and Italian sausage with shrimp mixture. If desired, top with fresh mozzarella, and serve.
