Strawberry Cheesecake Parfait

Ingredients
  • 1pound strawberriesstemmed and sliced
  • 1tablespoons sugar
  • 1 reduced-fat cream cheese8-ounce
  • 1/2cup plain or vanilla nonfat Greek yogurt
  • 1/2cup confectioners’ sugar
  • 1teaspoon almond extract
  • 1 1/2cups frozen nonfat whipped toppingthawed, divided
  • 2/3cup graham cracker crumbs
  • Mintgarnish, optional
Instructions
  1. In bowl, sprinkle strawberries with sugar and toss. Set aside.
  2. In mixing bowl, beat cream cheese, yogurt, confectioners sugar and almond extract until smooth. Fold in 1/2 cup whipped topping.
  3. To assemble parfaits, in small dish or glass, layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers if small enough dish.  Then, top with dollop of whipped topping. Garnish with mint, if desired.
