Ingredients
  • 1/2cup chopped onion
  • 1teaspoon minced garlic
  • 3 cups low-sodium fat free vegetable or chicken broth
  • 114 1/2-ounce can chopped tomatoes
  • 1 14 3/4-ounce can cream style corn
  • 1tablespoon worcestershire sauce
  • 116-ounce package frozen mixed vegetables
  • 1/4cup riceuncooked
Instructions
  1. In large pot coated with nonstick cooking spray, cook onion, and garlic, 5–7 minutes.
  2. Add broth, tomatoes, corn, Worcestershire and bring to boil. Add rice and reduce heat; cooking 15 minutes or until rice tender. Season to taste

Terrific Tip:  Think about adding extra vegetables; either leftovers or whatever you choose.  I like fire-roasted tomatoes for their more robust flavor, but you can use any canned tomatoes.
