Chicken Soup For Diet For Cancer Patients is Comfort Food All Times of the Year

Nutrition is important and nothing is more comforting than a bowl of chicken soup for cancer patients when you aren’t feeling well.  So, I created a hearty chicken and barley soup recipe version of this favorite remedy for my best cancer cookbook.  It is important what you eat and chicken soup is a good diet for cancer patients because it is easy on the stomach.  A hearty version of chicken soup for cancer patients actually became one our  family favorites.   This recipe makes a big pot to have throughout the week making it the perfect comfort food for cancer patients. By using Rotisserie chicken, it really is a time saver soup.


Chicken and Barley Soup Perfect Diet For Cancer Patients During Chemotherapy

When I made this easy Chicken, Barley and Bow Tie Soup recipe from Eating Well Through Cancer: Easy Recipes & Tips to Guide You Through Treatment and Cancer Prevention, everyone in the family, from kids to adults, wanted second servings. This is a family favorite of ours. It is important to me to include recipes that not only feed the cancer patients but the entire family. I made sure to keep the recipe easy for the caregiver to prepare or if you’re feeling better to make it yourself.

Chicken and Barley Soup
A hearty version of a favorite remedy with barley and pasta became one our favorites. This recipe makes a big pot to have throughout the week.
Prep Time 10 minutes
Cook Time 35 minutes
Servings 10 1 (cup) servings
Ingredients
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cups baby carrots
  • 8 cups fat-free chicken broth
  • 1/2 cup pearl barley
  • salt and pepper to taste
  • 2 cups bow tie pasta uncooked
  • 1/2 teaspoon dried basil leaves
  • 2 cups skinless coarsely chopped Rotisserie chicken
  • salt and pepper to taste
Prep Time 10 minutes
Cook Time 35 minutes
Servings 10 1 (cup) servings
Ingredients
  • 1 cup chopped celery

Instructions
  1. In large nonstick pot coated with nonstick cooking spray, sauté celery, onion, and carrots, about 5-7 minutes. Add broth and barley. Bring to boil, reduce heat, cover, and cook about 20-30 minutes or until barley is done.
  2. Meanwhile, cook pasta according to package directions; drain and set aside. When soup is done, add basil, chicken and season to taste. Heat 5 minutes.

Terrific Tip: If experiencing taste changes, add extra seasonings as needed to perk up your taste buds. Serve the soup in a mug and if temperature bothers you, serve only warm or room temperature.

I found these containers to be great for chicken and barley soup or any soup to take to someone’s home.  As I mentioned, you should always bring your Chicken and Barley soup to friends in disposable containers. I found myself using these containers for so many other things that I keep them in my pantry. They are reusable and dishwasher safe. Taking homemade food to cancer patients is something caregivers can help with by making food and taking it to someone to eat on their time frame.

Of course, I am always giving away food so they are useful to have on hand for soups or whatever recipes you are making.
