Ingredients
- 2 cups old-fashioned oatmeal
- 2 cups water
- 1 banana cut into chunks
- 2 tablespoons maple syrup or honey
- dash salt
- 1 teaspoon vanilla extract

Instructions
- With an immersion blender or in food processor, add all ingredients; blend until smooth. Let stand 5 minutes until batter thickens.
- In nonstick skillet coasted with nonstick cooking spray, pour about 1/4–1/3 cup batter into pan and cook 2–3 minutes on each side or until golden brown.
