Ingredients
- 1/3 cup canola oil
- 3/4 cup light brown sugar
- 1/3 cup sugar
- 1 egg
- 1 egg white
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 cups old-fashioned oatmeal
- 1 1/2 cups crisp rice cereal
- 1/3 cup flaked coconut

Instructions
- Preheat oven to 350ºF.
- In a mixing bowl, blend together the oil, brown sugar, and sugar. Add the egg, egg white, and vanilla, and mix well.
- In another bowl, combine the flour and baking soda and gradually add to the sugar mixture. Stir in the oatmeal, cereal, and coconut.
- Place tablespoonfuls of mixture on a baking sheet coated with nonstick cooking spray. Bake for 10–12 minutes or until lightly brown around edges.
