Perfect Side Dish for Any Occasion
Talk about a simple side! Corn Pudding, from KITCHEN 101: Secrets to Cooking Confidence cookbook is a year-round perfect Vegetarian and freezer friendly dish to accompany just about any main dish. Even the novice cook can easily whip this up. Open a few cans and if you don’t want to chop onions, pick up some pre-chopped onions to make it even easier! Sweet corn, cream-style combined with Jiffy cornbread makes the most mouth-watering combination!

- 2 tablespoons canola oil
- 1 egg
- 1/2 cup skim milk
- 1/2 cup chopped onions
- 1/2 cup chopped green onions
- 1 1/2 cups frozen corn thawed
- 1 can cream style corn 15-ounce
- 1 box corn muffin mix 8 1/2-ounce
Ingredients

- Preheat oven 350°F. Coat 9x9x2-inch baking dish with nonstick cooking spray.
- In large bowl, mix together oil, egg, and milk until blended. Stir in remaining ingredients.
- Transfer to prepared pan. Bake 45-55 minutes or until mixture is set and golden brown on top.

Terrific Tip: You can use canned corn instead of frozen if you like, but I prefer keeping frozen on hand for its taste and consistency.
