We all know it’s important to eat healthy but let’s face it – our mouth-watering southern cuisine makes our efforts to eat well extra difficult. Louisiana has so many famously delicious dishes, like Marinated Crab Fingers from Holly Clegg’s Guy’s Guide to Eating Well cookbook!

- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 1/4 cup balsamic vinegar
- 2 tablespoons cider vinegar
- 2 tablespoons olive oil
- 1 package Italian dressing mix .7-ounce
- 1 bunch green onions chopped
- 1 pound crab fingers
Ingredients

- In a bowl, combine all ingredients except crab fingers.
- Toss crab fingers in mixture and marinate 1 hour, or overnight, in the refrigerator.
