My Brithday Party at Los Colinas in Dallas Was FUN!!
My birthday party at the Four Seasons Dallas (Las Colinas) was so “over the top” that I am so excited to share it with all of you. I’ve never had such a perfect party with exceptional food, details and service. Jenna planned the event and Gilberto executed the party starting with my signature cocktail from Too Hot in the Kitchen, Pomegranate Margarita Martini from Too Hot in the Kitchen cookbook (recipes below) and we had lots of them! I have photos to prove it so relive my party and I only wish you could have tried the unbelievable food!

My Birthday Party Menu
I wanted a gourmet Mexican menu and met with the chef who specially created a dinner with memorable food that impressed my guests and definitely me.
Birthday Dinner Appetizers
Started with guacamole, salsa and hot chips (yes, the chips were hot!)
I couldn’t decide which appetizer I wanted so they prepared an appetizer sampler for each table to get to try three different appetizers! Outstanding and don’t ask me which was best! Mexican Tuna Tartar, Shrimp Mini Nachos and Crispy Beef Taquitos
Next on the menu was a Mexican Style Caesar Salad with Cilantro Dressing and Grilled Shrimp –-OMG fabulous!
Again, when it came to the entree, I couldn’t make a decision and wanted to offer my guests a sampler plate so that’s what they had! With hot chips still coming out on the table. Akaushi Marinated Beef Skirt and Green Chicken Enchiladas, Arroz Norteno, Braised Baby Carrots, Guajillo Cream sauce
And, then dessert was the absolute best and most beautiful German Chocolate Cake I have ever put in my mouth. I have decided this will be my birthday cake every year!
Birthday Party Decorations
I called my friend Jill from Stamped Paper who specializes in creative party planning for some fun decorations for a festive Mexican theme and she came through for me. She sent me to World Market for the margarita glasses and chocolate margarita candy bars. I also picked up colored napkins there and Jill made the adorable lime name tag. Not expensive but perfect for my birthday party. My kids picked up the flowers and made the arrangements. Lots of personal touches!!
There were also so many extras the Four Seasons at Dallas (Las Colinas) did to make my birthday SO SPECIAL! Can you believe they made a white chocolate Too Hot in the Kitchen cookbook cover with recipe! Then, even at brunch the next day, I was presented with this lovely treat. Now how did the waiter even know?
Of course, the best part of the birthday party was sharing it with my family and having my mother and father there for toasts!
Pomegranate Margarita Martini from Too Hot in the Kitchen
Pomegranate and margaritas pair up with a martini for a dose of fun and antioxidants. No bartenders needed as I served this easy- to- make drink in a pitcher. Be sure to make a big batch as I had to go back and make more.
Makes 3 cups
2 cups alcoholic margarita mix
1/2 cup pomegranate juice
1/4 cup tequila
1/4 cup lime juice
1. In a pitcher, mix together all ingredients. Serve over ice or in martini glass.
