Whenever we have out of town company, we usually make this wonderful recipe from Holly Clegg’s Louisiana cookbook because everyone always requests crawfish recipes! This healthy Cajun recipe freezes great and serves a crowd. Impressive and make-ahead!
You can even double this crawfish pasta recipe to serve a group. Easy entertaining recipe to the rescue since it freezes well and is make-ahead!
Servings 10-12 servings |
- 1 (8-ounce) package fettuccine
- 1 tablespoon butter
- 1 onion chopped
- 1 green bell pepper seeded and chopped
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 1 (12-ounce) can evaporated milk
- 4 ounces light pasteurized cheese spread
- 1/2 cup shredded part-skim mozzarella cheese
- 1 lb Louisiana crawfish tails drained and rinsed
- 2 tablespoons parsley chopped
- 1 tablespoon worcestershire sauce
- 1 teaspoon hot sauce
- 1 bunch green onions chopped
Ingredients

- Cook fettuccine according to directions on package. Drain; set aside.
- In large nonstick pot, melt butter and sauté onion, green pepper and garlic until tender. Add flour and stir until combined.
- Gradually stir in milk until mixture is smooth. Add cheese spread and mozzarella, stirring until melted. Add remaining ingredients, except green onions. Cook, stirring, 2 minutes or until heated.
- Toss with pasta and green onions.

This is one of Team Holly’s favorite kitchen gadgets. We love having these collapsible colanders in two different sizes because sometimes you don’t need a large one. Best of all, they don’t take up much room and they are for easy storage.
Of course, we use our collapsible colanders for Holly’s crawfish fettuccine recipe. Besides the pasta, we rinse and drain the crawfish if it is frozen. Also, remember to always rinse and drain canned beans to reduce the sodium. You don’t need a huge colander to do that!
