Make sure you tune in to Holly Clegg’s trim&TERRIFIC Kitchen on This Week in Louisiana Agriculture to watch AJ and I prepare my Simple Sausage Ratatouille from my trim&TERRIFIC Eating Well to Fight Arthritis cookbook, which is probably the healthiest of all my trim&TERRIFIC cookbooks. This recipe is from the High Fiber chapter, and what I like about this dish is how many options there are to tailor the ratatouille to your taste using Louisiana crawfish, ground meat or even vegetarian! I added ground meat in this video to make it a little heartier, but also because I like to use what I have on hand – already in the fridge. Remember cooking is creative!
