Looking For Best Chopped Salad Recipes? Make This Easy Greek Chopped Salad
Sometimes (especially summertime) all you want is a really good salad, and nothing beats Holly’s Greek Chopped Salad recipe from her KITCHEN 101 cookbook. This Mediterranean chopped salad recipe contains tons of fresh ingredients that are easy to find in the store or just lying around in the refrigerator. Lucky for me, I had most of the ingredients at home so I think it’s such an easy Greek salad recipe. So, I spent little to no money which is perfect for this college cooking girl! That’s why I think it is one of the best chopped salad recipes!
Servings 5 (1 cup) servings |
- 2 cups chopped fresh baby spinach
- 1 cup chopped peeled cucumber
- 1/2 cup chopped sun-dried tomatoes reconstituted
- 1/4 cup chopped red onion
- 1/4 cup chopped avocado
- 1/4 cup crumbled reduced-fat feta cheese
- 2 tablespoons sliced Kalamata olives
- 1/4 cup chopped pecans toasted
- 2 tablespoons lemon juice
- 1 tablespoon vinegar
- 1 teaspoon olive oil
- pepper to taste
Ingredients

- In large bowl, combine all ingredients except lemon juice, vinegar and olive oil. In small bowl, whisk together lemon juice, vinegar and oil. Toss with spinach mixture. Season to taste.

Terrific Tip: Reconstitute sundried tomatoes, let stand in hot water 5 minutes, and drain. Serving Option: Toss in grilled chicken or any leftover meat for an awesome main dish salad.

All the recipes are super easy to follow and make. Best of all, I usually have all the ingredients to make her easy healthy recipes and they are affordable!
Speaking of easy recipes……this recipe was so easy it only had one step! All I had to do was chop and measure all of the ingredients and toss them together! This Mediterranean chop salad includes classic ingredients.
