- 1 red bell pepper cored and chopped
- 1 teaspoon minced garlic
- 1/2 cup finely chopped onion
- 1/4 cup hoisin sauce
- 1 tablespoon peanut butter
- 2 tablespoons low sodium soy sauce
- 1 tablespoon seasoned rice vinegar
- 1 tablespoon freshly grated ginger
- 1 can water chestnuts drained and diced, 8-ounce
- 1/2 cup chopped green onions
- 1 head Butter lettuce

Instructions
- In large nonstick skillet, cook ground chicken about 3 minutes, making sure to crumble chicken as it cooks. Add red pepper, garlic, and onion, continuing to cook until chicken is done, about 3 minutes longer.
- Add hoisin sauce, peanut butter, soy sauce, rice vinegar, ginger, water chestnuts and green onions, stirring about 1 minute or until heated.
- To serve, spoon chicken mixture into the center of lettuce leaf, taco-style.
