How to Make Coconut Cake in a Crock Pot

Can You Believe It? Dessert Made in a Crock Pot!

Ok y’all, the Crock Pot Convenience chapter, in Holly Clegg’s Kitchen 101: Secrets to Cooking Confidence is because of you! After asking Facebook, many responded by saying how much you wanted slow cooker recipes. I just had to see what all the fuss is about – and boy do I get it now! As a coconut fan, I can’t get enough of this moist, delectable Crock Pot Coconut Cake.

Coconut Cake
Ever want to eat a cake hot from the oven? Now you can have your wish! Thought it would be fun to try a cake in my crock pot and this moist coconut cake rocks!
Servings 16 servings
Ingredients
  • 1 box yellow cake mix 18.25-ounce
  • 1/4 cup canola oil
  • 2 eggs
  • 2 egg whites
  • 1 teaspoon coconut extract
  • 1 1/3 cups lite coconut milk divided
  • 2 tablespoons confectioners’ sugar
  • 1/4 cup flaked coconut

Ingredients
  • 1 box yellow cake mix 18.25-ounce
  • 1/4 cup canola oil
  • 2 eggs
  • 2 egg whites
  • 1 teaspoon coconut extract
  • 1 1/3 cups lite coconut milk divided
  • 2 tablespoons confectioners’ sugar
  • 1/4 cup flaked coconut
Instructions
  1. In 3 1/2-6-quart slow cooker, insert plastic liner if desired, or coat with nonstick cooking spray.
  2. In bowl, combine cake mix, oil, eggs, egg whites, coconut extract and 1 cup coconut milk, mixing well. Transfer to slow cooker, cook on HIGH about 1 hour 15 minutes (if using 4 quart crock pot, will take about 2 hours).
  3. When cake is done, Whisk together remaining 1/3 cup coconut milk with confectioners’ sugar, mixing well. Poke holes in hot cake with toothpick; gradually pour coconut milk over top of cake. Sprinkle with coconut and serve.

KITCHEN 101 Highlights Easy Crock Pot Recipes

Crock pot or slow cooker recipes are such a time saver for the busy person.  Nothing beats an easy crock pot dinner and a one-dish meal. There is a crock pot symbol indicating crock pot recipes in KITCHEN 101 so look for it throughout the cookbook! With a home office you can smell the wonderful aroma cooking all day.

Whether you are bringing a meal to a friend or want a family pleasing dinner, casseroles are a great go-to dish and can be made ahead on your own time. These re-energized casserole style meals are simple to make and can be made ahead and frozen. Those boring cream of mushroom soup versions are a thing of the past. You can still have that no-fuss one-pot meal or dessert with flavor and flair the whole family will love!

Nutrition Nuggets & Terrific Tips:

  • One of the best tips I have found is to use the Reynolds crock pot liners in my slow cooker, before I added the ingredients. They fit all sizes of pots and keep the clean-up a breeze!
  • Although coconut can be calorically dense, it is rich in fiber, vitamins and minerals – and considered a ‘functional food’ because of its possible health benefits and healing properties – sign me up!
