Men’s Health Recipes: From The Heart Disease Chapter: When I’m Afraid Of A Broken Heart

I decide to feature the easy chicken recipe that’s on the man’s cookbook cover.  This delicious chicken recipe, Chicken with Tomato Topping and Mozzarella Cheese from Guy’s Guide To Eating Well is from the Heart Disease Chapter.  Packed with flavor and good for you ingredients like lean protein, green leafy spinach and tomatoes.  This is a diabetic chicken dinner recipe that’s also gluten free making it a healthy choice for any meal.  My Man’s Cookbook highlights Diabetic and gluten-free recipes making it easy for you to select the healthy options you need for quick meals.

Chicken with Tomato Topping and Mozzarella Cheese
Marinated and broiled chicken topped with fresh tomatoes, spinach, and mozzarella cheese makes a quick, dynamic dinner.
Prep Time 10 minutes
Cook Time 20 minutes
Servings 6 servings
Ingredients
  • 1/4 cup lemon juice
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon paprika
  • 6 boneless, skinless chicken breasts 4-ounce
  • 3/4 cup chopped onion
  • 1/2 teaspoon minced garlic
  • 1 pint assorted cherry tomato halves
  • 1 1/2 cups fresh baby spinach leaves
  • salt and pepper to taste
  • 1/3 cup shredded part-skim mozzarella cheese
Prep Time 10 minutes
Cook Time 20 minutes
Servings 6 servings
Ingredients
  • 1/4 cup lemon juice
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon paprika

Instructions
  1. In resealable plastic bag, combine lemon juice, oregano, and paprika. Add chicken. Refrigerate 1 hour or until ready to cook.

  2. Preheat broiler. Line baking pan with foil. Place chicken breasts on pan, discard extra marinade. Broil chicken 7–9 minutes on each side or until chicken tender.

  3. Meanwhile, in nonstick skillet coated with nonstick cooking spray, sauté onion and garlic until tender, 5 minutes. Add tomatoes; sauté few minutes longer. Add spinach, cooking only until leaves are wilted. Season to taste.

  4. Divide mixture on top of each chicken breast, sprinkle with mozzarella cheese.
