Southern Classic Cuisine Made Healthier

Known for good food and of course, a good time, Louisiana is rich in tradition – and our holiday favorites cannot be beat! We all know it’s important to eat healthy but let’s face it – our mouth-watering southern cuisine makes our efforts to eat well extra difficult. Louisiana has so many famously delicious dishes, like Marinated Crab Fingers from Holly Clegg’s Guy’s Guide to Eating Well cookbook!

Marinated Crab Fingers
Marinated crab fingers, my personal favorite, are simple and insanely good—a real crowd pleaser.
Prep Time 5 minutes + 1 hour to marinate
Servings 8 servings
Ingredients
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 cup balsamic vinegar
  • 2 tablespoons cider vinegar
  • 2 tablespoons olive oil
  • 1 package Italian dressing mix .7-ounce
  • 1 bunch green onions chopped
  • 1 pound crab fingers
Prep Time 5 minutes + 1 hour to marinate
Servings 8 servings
Ingredients
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 cup balsamic vinegar
  • 2 tablespoons cider vinegar
  • 2 tablespoons olive oil
  • 1 package Italian dressing mix .7-ounce
  • 1 bunch green onions chopped
  • 1 pound crab fingers
Instructions
  1. In a bowl, combine all ingredients except crab fingers.
  2. Toss crab fingers in mixture and marinate 1 hour, or overnight, in the refrigerator.

Terrific Tip: If you don't have balsamic vinegar, just use red wine vinegar.

Nutrition Nugget: Crabs, high in zinc, can trigger a surge in the production of sex hormones.
