Easy Make Ahead Breakfast

You will FALL in LOVE with this make ahead Oatmeal Blueberry Breakfast Bake recipe.  Enjoyed warm or cold, this is as simple as dump and stir casserole that tastes like an oatmeal cookie! If you are looking to streamline your mornings with a quick and easy nutritious bite without the fuss, this is your answer. Eggs, oats and berries combine for a delicious filling meal that will keep you full throughout the morning.

Oatmeal Blueberry Breakfast Bake
Start your day off right with this moist quick blueberry oatmeal bake. Keep in the refrigerator to enjoy all week.
Prep Time 5-10 minutes
Cook Time 30-35 minutes
Servings 9 servings
Ingredients
  • 2 1/2 cups old-fashioned oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter melted
  • 2 cups skim milk
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen (more if desired)
Prep Time 5-10 minutes
Cook Time 30-35 minutes

Ingredients
  • 2 1/2 cups old-fashioned oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter melted
  • 2 cups skim milk
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen (more if desired)
Instructions
  1. Preheat oven 375°F. Coat 9x9x2-inch baking pan with nonstick cooking spray.
  2. In bowl, combine oatmeal, baking powder, and cinnamon. In small bowl, whisk together butter, milk, sugar, egg and vanilla.
  3. Spoon half oatmeal mixture into prepared baking dish, and half blueberries. Top with remaining oatmeal mixture and sprinkle remaining blueberries on top, pressing them in slightly. Pour milk mixture, evenly over.
  4. Bake 30-35 minutes, or until light golden brown along the edges, and center is set.
