New recipe alert! Actually Poppyseed Chicken is an ‘old’ recipe that was always a staple at every church potluck. Poppyseed Potluck Chicken Casserole is a creamy satisfying dish that is beloved by all ages. It has been a favorite of mine since I was very young, and now my family gobbles it up often. With just a few healthy and convenient substitutions, like rotisserie chicken, low fat sour cream and brown rice – this version is lightened up but loaded in taste!
Potluck Chicken Poppyseed Casserole
Any cooked chicken can be used, but rotisserie chicken is our go-to. It is one of my very favorite, high protein ingredients and nothing helps dig in and chop up the chicken better than a good set of kitchen scissors! Useful in SO many recipes, kitchen scissors are a must have. You will want to make sure you have a plastic ziplock bag handy for this recipe. It will make crushing the cracking topping a breeze – plus easy cleanup!

- 4 cups chopped skinless rotisserie chicken breast
- 1/2 cup low-fat sour cream
- 1 10.5-ounce can low-fat cream of chicken soup
- 1 3/4 -2 cups cooked brown rice
- 1/4 - 1/2 cup butter melted
- 1 sleeve butter crackers Ritz, crushed, about 30
- 1 tablespoon Poppyseeds

- Preheat oven 375˚F. Coat 13x9x2-inch pan with nonstick cooking spray.
- In prepared pan, mix together chicken, sour cream, cream of chicken soup and rice.
- Combine crushed ritz cracker, melted butter and poppyseeds. Sprinkle on top of the chicken mixture. Bake for 20-25 minutes or until bubbly.
Nutritional Nugget: Poppyseeds contain a good amount of fiber, as well as manganese and the antioxidant, polyphenol – which is believed to help reduce the risk of heart disease.
