Ingredients
  • 1 package long grain and wild rice4.5-ounce
  • 1 bunch chopped green onions
  • 1 red bell peppercored and chopped
  • 3tablespoons olive oil
  • 1 green bell peppercored and chopped
  • 1/4cup chopped fresh parsley
  • 1teaspoon minced garlic
  • 3tablespoons balsamic vinegar
  • 1 cans black-eyed peasrinsed and drained, 15-ounce
  • 1tablespoon dijon mustard
  • 2tablespoons chopped jalapeno peppers
Instructions
  1. Cook wild rice according to package directions. Cool.
  2. In large bowl, combine wild rice with remaining ingredients.
  3. Whisk together olive oil, balsamic vinegar, Dijon mustard and jalapeno.
  4. Toss with rice mixture and vinaigrette mixing well. Refrigerate until serving.
