Barbecue Chicken Quesadillas
Spruce up leftover chicken into a light, quick evening meal or fun appetizer. Serve with salsa, avocado and/or sour cream.

Ingredients
  • 1/3cup chopped red onion
  • 1/2teaspoon minced garlic
  • 1cup packed baby spinach
  • 1cup shredded cooked skinless chicken breast
  • 1/4cup barbecue sauce
  • 4 flour tortillas8-inch
  • 1/4cup shredded part-skim mozzarella cheese
Instructions
  1. In small nonstick skillet coated with nonstick cooking spray, sauté onion and garlic until almost tender, about 5 minutes. Add spinach, stirring until wilted.
  2. In small bowl, combine chicken and barbecue sauce. Lay two tortillas flat and divide evenly with spinach mixture, chicken with sauce, and cheese. Top each with remaining tortilla.
  3. In nonstick skillet coated with nonstick cooking spray, heat skillet and cook tortillas until light brown, several minutes, turn and cook on other side, until light brown and cheese is melted. Cut into fourths and serve.
