Ingredients
  • 6tablespoons butter
  • 1 1/3cups sugar
  • 2 eggs
  • 2 egg whites
  • 1/4cup frozen lemonade concentratethawed
  • 1teaspoon vanilla extract
  • 2cups all-purpose flour
  • 1teaspoon baking powder
  • 1/2teaspoon baking soda
  • 1tablespoon grated lemon rindoptional
  • 1cup buttermilk
  • Lemonade Frosting
Instructions
  1. Preheat oven 350°F. Coat two (9-inch) round cake pans with nonstick cooking spray.

  2. In mixing bowl, beat together butter and sugar until well mixed. Add eggs and egg whites, one at a time, beating well after each addition. Add lemonade concentrate and vanilla

  3. In small bowl, combine flour, baking powder, baking soda, and lemon rind. Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture.

  4. Transfer batter into prepared pans. Bake 18-20 minutes or until wooden pick inserted in center comes out clean. Cool layers on wire racks. Ice with Lemonade Frosting (see recipe).
