Cajun Crawfish Burgers with Horseradish Sauce
I decided to turn my most requested crawfish patties recipe I used for Crawfish Cakes into incredible Cajun Crawfish Burgers.  OMG is this fantastic and I am the biggest burger fan!  Remember wherever you live, only buy Louisiana crawfish tails.

Ingredients
  • 1cup saltine cracker crumbs
  • 1tablespoon dijon mustard
  • 2tablespoons light mayonnaise
  • 1teaspoon hot sauce
  • 1 bunch green onionschopped
  • 1/3cup chopped fresh parsley
  • 1/3cup shreddedreduced-fat sharp cheddar cheese
  • 1pound crawfish tailsrinsed and drained
  • salt and pepper to taste
  • 1tablespoon olive oil
  • flour
  • horseradish saucerecipe follows
Instructions
  1. In a medium bowl, carefully combine all ingredients except oil and flour.

  2. Cover and chill 30 minutes, if time permits. Shape into 8 patties.

  3. In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned.

Serve with Horseradish Sauce, if desired.
