Chicken Chipotle Tacos with Avocado Salsa

Ingredients

chopped red onion

minced garlic

tablespoons
chopped chipotle peppers
in can

tablespoon
honey

cups
chopped tomatoes
1/4

chopped green onions

shredded skinless rotisserie chicken breast
salt and pepper to taste

small flour tortillas
heated
Avocado Salsa
(recipe follows)
Instructions
In large nonstick skillet, coated with nonstick cooking spray, sauté onion and garlic 3-5 minutes, stirring.
Add chipotle peppers, honey and tomatoes, cooking and stirring 5-7 minutes, or until slightly thickened.
Add green onions and chicken. Season to taste. Top each tortilla with chicken mixture and Avocado Salsa (see recipe).
