Chicken Chipotle Tacos with Avocado Salsa
Shredded chicken in a smoky fiery sauce, topped with refreshing cool avocado salsa makes an outstanding combo.

Ingredients
  • 1/4cup chopped red onion
  • 1teaspoon minced garlic
  • 2-3tablespoons chopped chipotle peppersin can
  • 1tablespoon honey
  • 2cups chopped tomatoes
  • 1/4cup chopped green onions
  • 2cups shredded skinless rotisserie chicken breast
  • salt and pepper to taste
  • 8 small flour tortillasheated
  • Avocado Salsa(recipe follows)
Instructions
  1. In large nonstick skillet, coated with nonstick cooking spray, sauté onion and garlic 3-5 minutes, stirring.
  2. Add chipotle peppers, honey and tomatoes, cooking and stirring 5-7 minutes, or until slightly thickened.
  3. Add green onions and chicken. Season to taste. Top each tortilla with chicken mixture and Avocado Salsa (see recipe).
