Chicken Lettuce Wraps
P.J Chang introduced lettuce wraps and I can’t wait for you to try my healthy, quick version. Think of this as an Asian taco with lettuce as your shell.

Ingredients
  • 1pound ground chicken
  • 1 red bell peppercored and chopped
  • 1teaspoon minced garlic
  • 1/2cup finely chopped onion
  • 1/4cup hoisin sauce
  • 1tablespoon peanut butter
  • 2tablespoons low sodium soy sauce
  • 1tablespoon seasoned rice vinegar
  • 1tablespoon freshly grated ginger
  • 1 can water chestnutsdrained and diced, 8-ounce
  • 1/2cup chopped green onions
  • 1 head Butter lettuce
  • 2tablespoons low sodium soy sauce

Instructions
  1. In large nonstick skillet, cook ground chicken about 3 minutes, making sure to crumble chicken as it cooks. Add red pepper, garlic, and onion, continuing to cook until chicken is done, about 3 minutes longer.
  2. Add hoisin sauce, peanut butter, soy sauce, rice vinegar, ginger, water chestnuts and green onions, stirring about 1 minute or until heated.
  3. To serve, spoon chicken mixture into the center of lettuce leaf, taco-style.

Terrific Tip: Use Boston, Butter, Bibb or even romaine lettuce. Look for diced water chestnuts in a can.
