Ingredients
  • 1 1/2pounds boneless, skinless chicken breastscut into strips
  • 1 onionchopped
  • 1 package penne pasta16-ounce
  • 1/2cup packed fresh parsley leaves
  • 1/2cup packed fresh basil leaves
  • 3cloves garlic
  • 3tablespoons olive oil
  • 2tablespoons water
  • 1tablespoon pine nuts
  • 1cup fat-free chicken broth
  • 1/2cup sun-dried tomatoes
  • 1/3cup sliced black kalamata olives
  • 1/3cup grated Parmesan cheese
  • 2tablespoons water

Instructions
  1. In a large nonstick skillet, sauté chicken about 5 minutes until browned; add onion and continue cooking until chicken is done.
  2. Meanwhile, cook pasta according to package directions, drain and set aside.
  3. In food processor, process parsley, basil, garlic and pine nuts until combined. With processor still running, add olive oil in a thin stream and continue processing until smooth and creamy. Add water gradually.
  4. Add pesto mixture and broth to chicken, cooking and stirring until well heated. Add pasta, sun-dried tomatoes, olives and cheese.
