Chicken Taco Rice Salad
This favorite toss-together southwest chicken taco salad includes simple ingredients and big flavor. This is one of those main dish salad recipes everyone raves about. This mixture with rice and mixed greens makes this main dish salad recipe a little different than your typical one. I LOVE the Salsa Vinaigrette but you can use your favorite bottled vinaigrette too.

Ingredients
  • 1(5-ounce) package =yellow rice
  • 6cups mixed salad greens
  • 2cups skinless rotisserie chickenshredded
  • 1(15-ounce) can black beansrinsed and drained
  • 1cup grape or cherry tomato halves
  • 1/2cup chopped red onion
  • 1/2cup shredded reduced-fat sharp Cheddar cheese
  • Salsa Vinaigrette
Instructions
  1. Prepare rice according to package directions. Cool. Set aside.

  2. In large bowl, combine cooled rice and all ingredients.  Toss with Salsa Vinaigrette (see recipe).
