Cool Coleslaw
You’ll enjoy this refreshing easy cole slaw recipe. It has cool flavors of cucumber, lime and mint contrasted with crunchy peanuts and sweet mandarin oranges.

Ingredients
  • 4cups shredded cabbagebag coleslaw
  • 1 bunch green onionschopped
  • 1/2cup chopped red onion
  • 1/2cup chopped cucumber
  • 2tablespoons lime juice
  • 2tablespoons cider or seasoned rice vinegar
  • 1tablespoon olive oil
  • 1(11-ounce) can can mandarin orangesdrained
  • 2tablespoons chopped fresh mint
  • 1/4cup coarsely chopped peanuts
Instructions
  1. In large bowl, combine cabbage, green onions, red onion, and cucumber. In small bowl, whisk together lime juice, vinegar and oil; pour over slaw.  Mix together.

  2. Carefully add mandarin oranges. To serve, add mint and peanuts, mixing well. Season to taste.
