Crawfish Cakes with Horseradish Sauce
Move over crab cakes! Outrageously delicious and diabetic-friendly! Delicious and scrumptious, you can make them ahead of time and refrigerate.  Or, they also freeze well.

Ingredients
  • 1cup saltine cracker crumbs
  • 1tbsp dijon mustard
  • 2tbsp light mayonnaise
  • 1bunch green onionschopped
  • 1/3cup fresh parsleychopped
  • 1/3cup reduced-fat sharp Cheddar cheeseshredded
  • 1lb Louisiana crawfish tailsrinsed and drained
  • salt and pepper to taste
  • 1tbsp olive oil
  • flour
  • horseradish sauce
Instructions
  1. In medium bowl, carefully combine all ingredients except oil and flour.
  2. Cover and chill 30 minutes, if time permits. Shape into 8 patties.
  3. In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned. Serve with Horseradish Sauce.
