Cucumber, Mint and Feta Salad

Ingredients
  • 3cups thinly sliced peeled cucumber
  • 1/4cup crumbled reduced-fat feta
  • 1/4cup seasoned rice vinegar
  • 1tablespoon olive oil
  • 3tablespoons chopped green onion
  • 3tablespoons fresh chopped mint
  • 2tablespoons pine nutstoasted
  • salt and pepper to taste
Instructions
  1. In bowl, combine cucumber and feta.
  2. In small bowl, whisk together vinegar, oil and green onion. Toss with cucumber and feta. Add mint and pine nuts. Season to taste.
