Energy Bites
Perfect for healthy kids snack recipes. I love oatmeal and often think of them as no bake oatmeal energy bites. I have lots of kid’s healthy snacks on my healthy food blog for you to check out.

Ingredients
  • 1cup old-fashioned oatmeal
  • 1/3cup toasted coconut flakes
  • 1/2cup peanut butter
  • 1/2cup ground flaxseed
  • 1/2cup semisweet chocolate chipsoptional
  • 1/3cup honey
  • 1teaspoon vanilla extract
Instructions
  1. In medium bowl, stir together all ingredients until thoroughly mixed. Let chill in refrigerator 30 minutes.
  2. Once chilled, roll into heaping teaspoon-size balls. Store in an airtight container and refrigerate up to 1 week.
